Are you a master of making curry paste?

Curry paste can be made with dried chillies. It is widely used in Thai cuisine.

Curry paste is one of the most popular condiments in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.

It's not difficult to make at home! Follow our step-by–step guide below.

Step1 - Prepare Ingredients

  • Before you can start the recipe, it is important to have all the ingredients ready.
  • Start by peeling and chopping shallots (about 2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
  • Next, cut four garlic cloves into pieces. The lemongrass stems should be roughly 1/2 inch thick.
  • Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
  • Next, cut kaffir lime leaves into thin strips (about 5 inches long). Remove the white part of the stem and set it aside.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Finally, measure out sugar and salt.

Step2 - Grind Ingredients

  • Grind all ingredients together until smooth.
  • The texture should be similar to that of peanut butter.
  • Take note: If you are looking to reduce oil in your dish you can add water to the mix.

Step3 - Add Coconut Milk

  • Mix the coconut milk into the mixture.
  • Add coconut milk slowly so that the paste does not become too sticky.
  • If you prefer less spicy, add fewer chillies and more galangal root.
  • If you prefer it spicy, add more chillies or less galangal roots. The final product should be tasty to you.

Step4 - Serve

  • Serve with your favourite foods.
  • Enjoy!
