This recipe is for all my fellow zucchini-lovers who are currently surrounded by an abundance of zucchini in their gardens. You may be like me, and have some extra zucchini in your fridge that needs to be used before it spoils. Zucchini Muffins are one of my favorites ways to use zucchini. They're delicious and almost irresistible. These muffins are soft, moist and a great way to sneak in some green vegetables!
Ingredients for Zucchini Muffins
Baking recipes often use pantry staples that you have in your home. These zucchini muffins are easy to make using the following ingredients:
- Grated Zucchini - Zucchini contains a large amount of water. However, this recipe does not require you to squeeze or pat out any excess water. The extra liquid in this recipe helps to add moisture to muffins, saving you a step.
- All-purpose flour gives the muffins their structure. You can substitute half the flour with whole wheat without changing the taste or texture.
- Baking powder & baking soda- Both are leavening agents that help the muffins to rise. Both were used due to the added acidity of the applesauce.
- Eggs to help bind the ingredients together.
- White Granulated Sugar and Brown Sugar -- the combination of these two sugars balances the sweetness, moisture, and texture of muffins.
- Applesauce & Oil – yes, both are used in this recipe. Applesauce and oil together keep muffins moist but not oily. You also get more flavor by adding applesauce. Here, we don't make any dry muffins! :)
- Vanilla & Cinnamon: Keep the spices added simple. This pair of spices enhances the flavor in the zucchini muffins.
Should you peel the zucchini before grating it
It is not necessary to peel the zucchini before you grate it. It's not noticeable because the skin is so thin and delicate. Give it a good scrub with a vegetable brush or your hands.
Some Recipe Tips
- Do not overmix the batter. The muffins will become dense and hard if you overmix. Mix dry and moist ingredients until just barely combined. There should be no dry flour in the bowl.
- Oil your muffin pan well. Use cupcake liners or oil your nonstick muffin pan to keep muffins off the pan.
- This batter can be easily stretched to make 12 muffins of regular size. We wanted to make larger, bakery-style muffins so we divided the mixture into eight muffin wells.
How to store Zucchini Muffins
Let the muffins cool down completely at room temperature prior to storing. Store leftover zucchini muffins at room temperature in an airtight bag or container. Store in a freezer bag up to three months. Thaw frozen muffins in the microwave or at room temperature for 30 seconds. Add a little butter, and enjoy!
How to use the remaining Zucchini
Other great ways to use your summer zucchini are by making baked Zucchini Slice, Lemon Pepper Zucchini or these crispy Baked Zucchini Fries. Some other great zucchini recipes are our Charred Corn Zucchini Salad, or you can add sauteed Zucchini to your favorite dish like this Blackened Salmon and Zucchini dish.

- 2 cups grated zucchini (about 1 lb. ) $1.49

- 2 large eggs $0.22
- 1/2 cup granulated sugar $0.20

Instructions

Pre-heat the oven to 350degF. Then, wash the zucchini thoroughly, trim the stem off, and then grate it using a box grator with large holes. Set the zucchini aside.

In large bowl, combine the dry ingredients: flour, baking powder and soda, cinnamon, salt.

In another bowl, combine the wet ingredients: eggs, brown sugar and granulated white sugar. Add applesauce.

Add the grated Zucchini to the bowl containing the moist ingredients. Stir until combined.

Pour the wet ingredients in the same bowl with the dry ingredients. Mix ingredients until they are just combined. Mix well, but do not overmix.

Divide batter into eight muffin tins lined with greaseproof paper or lined with greaseproof paper.

Bake the muffins at a temperature of about 240 degrees Fahrenheit for 24 minutes, or until they are golden brown in color and puffy in the middle. Allow the muffins a few minutes to cool, then gently loosen the edges using a knife. Transfer the muffins onto a wire rack for the final cooling. Enjoy!

How to Make Zucchini Muffins: Step by Step Pictures
Pre-heat the oven to 350degF. Then, wash the zucchini and trim the stem. Grate 2 cups (roughly 1 lb) of zucchini. Set the grated zucchini aside.
In a large bowl, combine 2 cups of all-purpose flour with 1 tsp. baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, and 1 tablespoon cinnamon.
In a separate mixing bowl, combine 2 large eggs with 1/2 cup sugar granulated, 1/2 cup sugar brown, 1/3 cup applesauce and 1/4 cup cooking oil.
Add 2 cups grated zucchini into the bowl with wet ingredients. Stir until well combined.
Pour the wet and dry ingredients in the same bowl. Stir until the dry flour is completely gone and you have barely mixed together. At this stage, be careful not to overmix.
Divide the batter evenly between eight muffin cups lined with greased paper or lined with greased oil.
Bake for 24 minutes, or until golden and puffy in the middle. Be prepared to have your kitchen smelling amazing! Allow the muffins about 5 minutes to cool, then gently loosen the edges with a knife. Transfer the muffins onto a wire rack for cooling.
These soft, fluffy and delicious Zucchini Muffins are great by themselves, or with some butter on top.

You can even experiment with mixing different spices to create new flavours. To make minty water, you can combine spearmint and peppermint leaves. Ginger and cardamom pods can be used to make spicy ginger Tea.
Once you have mastered the art of making powdered spices you can use that same technique for herbs. Basil, rosemary, thyme and sage are some of the most popular herbs.

You might be wondering where to begin if you don’t have a garlic press. We have some tips to help get you started.
First of all, you'll need to get a large bowl. Place the bowl underneath the press and pour the crushed garlic into it. Now adjust the pressure regulator to the maximum.
Next, turn the handle counterclockwise until you hear a click. The top portion of the press should come off, revealing a flat surface. You can slide the blade across the bowl. Continue turning the handle in a clockwise direction until the blades come to a close.
Finally, remove the pressed garlic.
