The summer is officially here, and I enjoy spending the few moments that I have alone in the sun. What would make this moment better? Imagine a big scoop of creamy, dreamy ice-cream. Everyone -- and I do mean everyone -- loves ice-cream. There's an alternative to the usual ice-cream flavors, which is not only delicious but also healthy (more about that in a moment).
This creamy creation is a combination of the nutty goodness of peanut butter, the honeyed sweetness of cottage cheese and the velvety goodness from full-fat. After adding some chocolate chips, and perhaps a hint fresh mint to the mix, you will have a healthy ice cream that is not only delicious but also healthy. You don't need to stop here! Add some fresh fruit and your favorite nuts for an extra-delicious treat.
This heavenly dessert can be made in a few easy steps. You can make your own ice cream with a few simple ingredients and a few easy steps. Try my cookie dough and banana ice-cream if you enjoy ice-creams.

You can make your sing with joy by using cottage cheese as the main ingredient in your ice-cream.
This ice cream will be even healthier if you use only natural peanut butter. This will reduce the amount of sugar, salt and oils and increase the protein content. Who would have thought ice cream was so tasty, fun and healthy?

You can add as many flavors as you like. That's it!
- 2 cups full-fat cottage cheese
- Honey 1 tbsp
- Peanut butter 2 tbsp
- Chocolate chips 2 tbsp
- Mint leaves, 1 sprig

- If I didn't mention the different syrups available, I would feel guilty. But honestly, maple syrup or (more) honey is a better option to drizzle over your dessert.
Serving Suggestions
If you are a purist then eating ice cream alone is the way to go. But if your newfound dessert has inspired you to try other sweet treats here are some suggestions.
Put a small amount on the lovely Paleo Pumpkin Pie. You can crumble the Paleo Pecan Pie Cookies on top of the ice-cream. Why not add it to this Apple Pie Overnight Oats for breakfast, since this is such a healthy option?

If you don't own an ice-cream maker, it is okay! You can use your blender or food processer to make ice cream.
Blending is a process that requires a lot of effort. Set the blender to HIGH for a silky texture. After a few moments, you should have the desired consistency. You can then strain it to remove any lumps.
You could use the lower fat stuff, but it won't taste as good.
Try maple syrup, agave or even granulated sweetener if honey is not for you or you do not have any on hand.
You have carte blanche (creme blanc?). Add your favorite ingredients like nuts, fruits or candy pieces. Be creative!
