What is Texas Sheet Cake ?
Texas Sheet Cake, also known as jelly roll cake or 10x15 sheet cake with a depth of two inches is a simple recipe for chocolate cakes. The cake will not be as thick if you use a larger baking pan. It will also cook quicker. After cooling, cover the sheet cake with a thick layer warm homemade chocolate icing.
The thickness of the cake is what makes Texas Sheet Cake different from regular cake. The traditional cakes are usually thicker, and they may be layered. The cakes are also removed from the pans, and then frosted. Texas Sheet Cake can be made in a single pan. The thin batter layer bakes faster than traditional cakes. The cake is then frosted in the pan.
Ingredients For Texas Sheet Cake
This is a recipe that must be followed exactly as written. Unfortunately, since baking is a science, I can't substitute any of the ingredients. It's fine to experiment but I cannot guarantee the results. What you'll need to make Texas Sheet Cake is:
- All Purpose Flour- Creates the structure of crumb.
- Brown Sugar Granulated Sugar and Powdered Sugar are sugars that do more than just sweeten cake and icing. Granulated and brown sugars soften and moisten the cake crumb. Powdered sugar gives structure to icing.
- Baking Soda and Baking Powder- leaven and create a light and airy crumb.
- Butter - gives the cake a tender, light texture. It also helps it rise. The butter also gives the icing a richer taste.
- Unsweetened Cocoa powder- Adds a rich chocolate flavor to cake and icing.
- Adds depth to chocolate.
- Eggs - Provide structure to leaven the cake.
- Mayo adds moisture to the cake and makes it richer.
- Heavy cream - adds richness and thins the frosting.
- Vanilla adds depth to icing.
Tips for making perfect Texas sheet cake
- For a richer chocolate flavor, use dark cocoa powder.
- While you are making the batter, grease your sheet pan and dust it with some flour. Then, freeze it. This will prevent the batter from moving the butter when it hits your pan and creating spots where your cake may stick.
- Avoid using parchment because you will serve the cake on the baking sheet. As you cut the cake, your knife may shred the paper and small pieces of paper can get stuck in the slices.
- Add chopped nuts to the top of your cake before frosting it. This will add some texture and crunch. Toasting them will give you an extra taste.
- If you want a slightly messy experience, frost the cake when it is still warm. Wait until the cake is completely cooled down before frosting it. Let it cool down for a few minutes to allow the icing some time to harden.
- Texas sheet cake can be served at any temperature. It's delicious warm or cold. (IE Anytime.)
Can you make the cake ahead?
You can prepare Texas Sheet Cake in advance. To keep the icing shiny, I recommend frosting it on the day. The cake can be baked up to two days in advance. Wrap it in aluminum foil, then plastic. Let it cool. You can leave it at room temp or freeze, then defrost. When you are ready to serve, make your icing.
How to Cut Texas Sheet Cake
This cake is easy to cut. It's not necessary to slice through several layers and hope that your slices will be even. You can cut the one layer into easy to manage squares or rectangles. We cut 15 brownie-sized slices of 3x3 and made them into 15 pieces. You can also cut it into 2x3 slices to get 25 servings. This cake is perfect for large events like school bake sales or potlucks.
How to store Texas Sheet Cake
Texas sheet cake is good to store at room temperature up to 3 days. Wrap the cake in aluminum foil and plastic wrap to prevent it from drying. Double-wrapped cakes can be frozen for up to two months. This is perfect for chocolate emergencies. Beth and I enjoy them at least once per week. It can be defrosted at room temperature over night. You don't need to bring the food to room temperature in order to enjoy it. On hot summers days, I'll eat it right from the freezer.

Instructions

Place the rack in the middle of your oven, and heat it up to 350degF. Butter melted is used to grease a 10x15 jelly roll pan with a 2-inch edge. Flour the pan lightly. Place the pan in the freezer and remove any excess flour.

Combine the flour with the granulated and brown sugars, salt, baking soda, baking powder and baking powder in a large mixing bowl.

Melt the butter in a pan over medium heat. Then brown it. Remove the pan from the heat.

Stir the cocoa powder into the brown butter to ensure that it is well incorporated.

Put the pan back on medium heat. Stir in the coffee. Remove the pan from the heat.

Combine the mayonnaise with the vanilla and eggs. Add a few teaspoons of chocolate (to temper) the egg mixture.

After the egg mixture has warmed, combine the chocolate and the egg mixture.

Combine the ingredients by pouring the wet ingredients over the dry ones.

Pour the batter into the sheet pan. Bake for 15-20 minutes until you can feel a slight spring in the cake when pressing your finger against its surface. A toothpick inserted in the middle should come out clean.

After the cake has been removed from the oven, prepare the icing. Add the cocoa powder, heavy cream and vanilla to a large pan and heat it on medium. Stir until incorporated.

Pour 3/4 of your warm frosting in the middle of the cake. Spread the frosting over the cake using a spatula. Add more frosting as needed to cover it from end to the end. Enjoy the compliments that you will receive after cutting and serving your cake!

How to make Texas sheet cake - step by step photos

Combine 2 cups all-purpose flour with 1 cup of white sugar, 1 1/2 teaspoons salt, 2 teaspoons of baking powder and 1/2 teaspoon of baking soda in a large mixing bowl.
Melt 1 cup (2 sticks) of butter in a pan with a light color over medium heat. It will first foam and then start to brown. Stirring constantly will help distribute heat evenly. Once it has a light color, remove it from the heat.
Stir in 6 tablespoons unsweetened cocoa.
Add 1 cup of hot coffee and stir. Stir in 1 cup of hot espresso. Remove the pan from the heat.
Combine the two eggs with 1/2 cup mayonnaise, 1 teaspoon vanilla and a large bowl. To temper the egg mixture, add a few teaspoons of chocolate. The temperature of the mixture is slowly raised to prevent the eggs from heating too quickly, and forming scrambled egg.
Add the warm egg mixture to chocolate mixture.
Pour the wet ingredients in the dry ingredients, and mix just enough to combine.
Add the batter to a sheet pan, and bake it for 15-20 minutes until you can press your finger lightly on the surface of the cake and the toothpick in the middle comes clean.
The icing can be made after the cake has been taken out of the over. Add 1 cup (two sticks) of butter, 1/4 cup heavy cream, 1/3 cups of cocoa powder unsweetened (sifted for lump-free), 1 teaspoon vanilla and 2 1/2 cup powdered sugar to a large saucepan set over medium heat. Stir until incorporated. Do not boil.
Pour 3/4 of your warm frosting in the middle of the cake. You may have extra frosting depending on how high your cake is and the depth of the pan. Spread the frosting over the cake using a spatula. Add more frosting as needed to cover it from end-to-end. Enjoy the compliments that you will receive after cutting and serving your cake!

It's very simple to make this at home. Follow the steps below to make it easy!
Step1 - Prepare Ingredients
- Before you start this recipe, make sure that all ingredients are prepared.
- Start by peeling and chopping shallots (about 2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
- Next, slice four garlic cloves. Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
- You can then crush the red chilli bell peppers into small pieces (about 4 tablespoons), and then you can remove the seeds (optional).
- Next, slice the kaffir lime leaves in thin strips of about 5 inches. Set aside the white portion of the stem.

- If you like it milder, reduce the number of chillies used and add more galangal root.
