This is the best version of Strawberry Spinach Salad I have ever made. This salad includes candied pecans and candied strawberries with a homemade balsamic dressing. It's a delicious combination of textures and flavors that compliment each other. This salad is similar to a fancy one you would get in a café, but it's much cheaper. I'd eat this "summer"-style salad all year round!

What is in Strawberry Spinach salad

This salad is full of delicious flavors and textures. What you will need is:

  • Baby Spinach is the foundation of this salad.
  • Strawberries -- fresh, juicy strawberries are a wonderful sweetener.
  • Red Onion -- slightly sharp, and a great contrast to the sweetness from the strawberries and candied nuts.
  • Feta Cheese- the soft, creamy and salty feta cheese goes well with strawberries in this recipe. If you don't like feta cheese, blue cheese or goat cheese will also work.
  • Candied Pecans -- These candied pecans are, in my humble opinion one of the best components of the salad. You can also substitute the pecans for toasted almonds or walnuts to get a similar crunchy sweetness.
  • Balsamic Vinaigrette- Easy homemade balsamic vinegar dressing to top it all off.

This strawberry salad's dressing is my favorite... okay, it's tied with the candied nuts! I used Beth's simple homemade balsamic vinegaraigrette, but replaced the mayonnaise for honey to give it a sweeter taste. The results were absolutely incredible!

If you do not have all the ingredients in your pantry, then you can use store-bought balsamic vinegar. But I promise that this homemade vinaigrette tastes wayyyyyyyyyyyyyyyyyyyyyyyyyyyyyyy better. You should definitely give it a go! ;)

Budget-Friendly Recipes

  1. If you can't find chopped nuts in your local grocery store, try toasting some old bread instead. This is similar to the Panzanella Salad.
  2. Add your favorite pasta, such as penne or bowtie, to bulk up the salad.

How to store Strawberry Spinach Salad

The strawberry spinach salad can be stored in the refrigerator for up to three days. To prevent the spinach from wilting, store the strawberries separately. Add the dressing to the salad just before serving.

Serving Suggestions

Monti and myself ate this salad as a lunch by itself. You can add grilled shrimp or chicken to the top for an even more filling meal. This salad pairs well with leaner proteins like pan-seared or baked chicken.

Balsamic Vinaigrette

  • 1/3 cup olive oil $1.10

  • 8 oz baby spinach $1.83
  • 1/2 lb strawberries, sliced $1.25
  • 14 thinly sliced red onion $0.21
  • 2 oz crumbled feta cheese $1.82

Instructions

  • Make the balsamic dressing. Add the olive, balsamic, honey, Dijon, garlic, basil, salt and freshly cracked pepper to a blender, jar or bowl. Close the jar, and then shake, whisk, or blend the ingredients until they are evenly combined. Set aside the dressing.
  • The next step is to make candied pecans. In a small, non-stick pan, add the butter and brown sugar with a pinch salt. Stirring constantly, heat over medium-high heat.
  • Add the pecans and brown sugar to the skillet once the butter has melted. Stir the mixture with the brown-sugar. Continue cooking over medium heat and stir every 10-15 seconds, until the brown sugar is fully melted (looks glossy rather than grainy).
  • Transfer the candied nuts to a baking sheet lined with parchment paper as soon as you remove the skillet from heat. Spread out the pecans evenly and in a flat, even layer. Allow them to cool down for 10 minutes until the candied coating is fully hardened.
  • Prepare the strawberries, red onions and feta cheese. The strawberries should be sliced thinly, the red onion sliced finely, and the feta crumbled. These ingredients can be set aside.
  • Divide the spinach among four plates. Sprinkle 2 Tbsp balsamic vinegar on each bed of spinach.
  • Each salad should be topped with sliced strawberries, red onion, candied pecans and feta cheese. Enjoy! Feel free to drizzle some more balsamic vinegar over each salad.

How to make a STRAWBERRY SPINSASALAD with photos - step by step

Make the homemade vinaigrette. Add to a blender, jar or bowl 1/3 cup of olive oil, 3 tablespoons balsamic vinaigrette, 2 tablespoons honey, 1/2 teaspoon Dijon mustard and 1 minced garlic clove. Add the top to the jar, and then shake it, whisk the mixture in a bowl or blend the ingredients until they are all evenly combined. Set aside the vinaigrette.

Then, make the candied nuts. Add 1/2 Tbsp of butter, 2 tbsp of brown sugar and a pinch salt to a small, non-stick pan. Stirring constantly, heat over medium-low heat until butter and brown sugar melts. Stir in 1/2 cup chopped pecans and add to the mixture. Continue cooking for another 2-4 minutes, or until all the brown sugar has melted and the pecans are completely coated.

To prevent brown sugar from burning, remove the pan from the heat as soon as possible. Spread the candied nuts out on a baking sheet lined with parchment paper. Let them cool down for 10 minutes to allow the sugar coating to harden.

Prepare the remaining ingredients. Wash and thinly slice 1/4 red onion. Portion out 2 oz. of crumbled cheese. Gather your candied pecans.

Divide 8 oz. of spinach into four salad plates. (approximately 2 oz. per plate). Or, you can place all the spinach in a large serving bowl. Pour 2 Tbsp balsamic dressing on each salad plate, or pour 1/3 cup over the spinach bowl. The rest of the vinaigrette can be added right before serving.

Divide the toppings between four salad plates (sliced strawberries and red onions, 1 tablespoon crumbled feta cheese, 1-2 tablespoons candied pecans), or add them to a large salad serving bowl. Enjoy! Drizzle a bit more balsamic on each salad.
