Here's some finger-licking goodness! Everyone will enjoy this summer classic shrimp boil. Serve with hot sauce and lemon wedges.

The classic shrimp boil, also known as Low Country Boil, is a summer staple. It's best served on newspaper, with lemon wedges and Old Bay Seasoning, along with cold beer.

It is important to use a large pot, around 8-9 qt. You should have all your ingredients ready - unpeeled prawns, corn, sausages, and baby potato. They will all be cooked in a lemony, garlicky beer broth seasoned Old Bay, Zatarain’s Crawfish Shrimp & Crab Boil, (the best seasoning IMO).

Serve with a generous drizzle of that buttery Old Bay goodness. I love to serve some crusty fresh bread with this dish.

Servings six servings

Ingredients

  • 2 (12-ounce) bottles lager or ale beer
  • 1 (3-ounce) package Zatarain's Crawfish, Shrimp & Crab Boil
  • 4 tablespoon Louisiana style hot sauce
  • 1 large sweet onion quartered
  • 1 lemon halved
  • 1 head garlic halved
  • 1 bay leaf
  • 1 pound baby red potatoes
  • 3 ears corn each cut crosswise into 3 pieces
  • 1 (12-ounce) package andouille or kielbasa sausage cut into 1 1/2-inch pieces
  • 2 pounds large shrimp unpeeled

Butter mixture

  • 1/2 cup unsalted butter
  • 1 tablespoon Louisiana style hot sauce
  • 1 1/4 teaspoons Old Bay seasoning

Instructions

  • In a large Dutch oven or stockpot, combine 10 cups of water, beer and Zatarain’s Crawfish Shrimp & Crab Boil with hot sauce, bay leaf, lemon, onion, garlic, and Zatarain’s Crawfish Shrimp & Crab Boil. Bring to a simmer; cover and reduce heat until flavors are blended. This should take about 10 minutes.
  • Add potatoes, reduce heat, and simmer for 10 min.
  • Add corn and sausage. Reduce heat and simmer for 10 minutes until potatoes are tender.
  • Add shrimp to the pan and cook over medium heat, stirring frequently, for about 4 minutes. Drain well.
  • Serve butter mixture immediately.

  • Combine butter, Old Bay seasoning and hot sauce in a small pan over medium heat. Bring to a rolling boil, reduce heat, and simmer for 1-2 minutes, stirring frequently.

Most people associate organics with fruits, but organic products also include dairy, meat and poultry, as well as baked goods, personal care items, pet food and household cleaning supplies.

You should only purchase chicken that has been raised organically. It must not have ever been treated with antibiotics. Omnivore chickens eat both animals and plants. Omnivorous chickens have a digestive tract composed of a crop, proventriculus, gizzard, small intestine, large intestine, and anus.

It is important to ensure that dairy products are from cows that were fed 100% organic feed. Like ruminants and dairy cows, they have four stomach compartments. Milk comes from the fourth stomach compartment--the udder.

You should always check the label before purchasing any other livestock. This will let you know what percentage of the diet was given to the animals. For example, pork may be marked "95% organic" to indicate that 95 percent of the pork's feed is organic.

However, the younger generation is leading the charge in choosing organic food. Millennials are twice likely to choose organic food than the baby boomers. Young adults below 35 years of age account for 25%.

Organic foods: Are they healthier and more nutritious than conventional food?

Organic foods are grown without the use chemical pesticides or synthetic fertilisers. They are grown under natural conditions without artificial inputs such as fungicides, insecticides, herbicides, hormones, antibiotics, or genetic engineering. Organic farming practices include crop rotation, cover crops, composting animal manure, recycling wastewater, and integrated pest management (IPM).

The USDA National Organic Program (NOP) was established in 2002 to regulate the production, handling, processing, labelling, sale, and distribution of organic products sold in the United States. NOP regulations make sure that organic agricultural product conforms to the Federal Food, Drug, and Cosmetic Act. Organic products must also be free from banned substances, such as pesticides residues, growth hormones and irradiation.

There are two types available in the U.S. for producers who want their products to be labeled "organic". One for farmers and ranchers, and one for manufacturers. Both programs require an annual audit of the operations in order to confirm compliance with stringent standards. Many certifying agents offer this service, including CCOF Certified Organic Farmers & Ranchers (QA International), American Grassfed Association, and Quality Assurance International. The three organizations all provide verification by third parties that farms have followed strict guidelines for environmental stewardship as well as labour practices and the care of livestock.

The USDA's Economic Research Service estimates that organic agriculture was responsible for $4.7 billion of 2013 sales. That year, retail spending on certified organic products totalled nearly $1.5 billion, representing a 23 percent increase since 2009. The number of grocery stores that sold organic products increased 12 percent over the same period. Direct purchases of organic produce saw a 29 percent increase in spending, while seafood, meat, poultry and eggs experienced a 1 percent growth.

While organic food costs more, consumers say its quality justifies the added expense. Consumer Reports conducted a survey in 2015 and found that 88 percent of respondents would pay more for organic foods if they had higher nutritional value. Health Affairs also reported that organic food intake is associated with fewer health problems, such as obesity, diabetes and heart disease.

While there is no evidence that organic food can prevent or treat any diseases, there are some studies suggesting that eating them may improve your overall health by reducing your exposure to pesticides and other contaminants. In 2010, a review that included 31 studies concluded that organically-raised beef had lower levels of parasites and toxic chemicals than conventionally reared beef. A separate analysis of 11 publications from 2012 produced similar results.

According to a 2014 report by the Environmental Working Group, the incidence of foodborne disease caused by E.coli, salmonella or listeria monocytogenes, E. coli and E. coli O157H7 was lower when organic chicken, non-organic pork, beef, lamb and milk were compared. After 2006, when USDA required stricter organic standards in animal raising for human consumption, the group noted that E.coli O157 was less common among children and adults.
