This is the best recipe for homemade shawarma. It uses an amazing (and simple!) spice mixture. Spice mixture. This is great for salads, bowls and wraps!
Shawarma, a popular Middle Eastern street food, is made with marinated meats such as lamb, beef, or chicken. This popular street food is now available in the US. You can easily make it at home using a simple spice mix.
Chicken breasts are also a great substitute. You can marinate the chicken in olive oil with fresh lemons and garlic, as well as your pantry spices for up to 2 hours.
Serve these on a warm grain bowl, with some warm pita or on a grill. I like to serve it with a side of Tzatziki Sauce, and lots of pita bread.
CAN CHICKEN BREADS BE USED?
Chicken thighs are a better choice than chicken breasts because they have more fat and dark meat. This will result in juicier chicken that is more flavorful when cooked on the grill.
WHAT DO I DO IF I DO NOT HAVE A GRILL?
No grill, no problem. This can be done with a cast-iron grill pan, or a large skillet.
Easy Chicken Shawarma
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon water
- 1 tablespoon lemon zest
- 1 tablespoon freshly squeezed lemon juice
- 3 cloves garlic minced
- 2 teaspoons ground coriander
- 2 teaspoons sweet paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground Turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cardamom
- Kosher Salt and freshly ground Black Pepper To taste
- 2 pounds skinless, boneless chicken thighs
- 1 1/2 tablespoons canola oil
Instructions

SEASONING MIXTURE: In medium bowl, whisk together oil, water and all the spices. This includes coriander, paprika cumin, turmeric cinnamon ginger cayenne, cardamom 1 teaspoon of salt, and 1/2 teaspoon of pepper.

Combine chicken with SPICE MIXTURE in a gallon-sized Ziploc bag, or a large bowl. Marinate for 2 hours up to 24 hours, rotating the bag every so often. Drain the marinade from the chicken.

Heat grill to medium-high heat.

Rub chicken with canola - oil. Season with salt and pepper to taste.

Place chicken on grill and cook it, rotating the chicken occasionally, for about 10 minutes, or until it reaches an internal temperature of at least 165 degrees F.

Serve immediately with the tzatziki.
