Salmorejo, a chilled Spanish soup, is delicious and creamy. It's a great way to use summer tomatoes and bread that has been sitting around for a few days. It was the first time I tried it in Barcelona, and I fell in love with its velvety tanginess as soon as I tried it. This Salmorejo is my go-to recipe for summer dinner parties because it's so easy to make and looks so elegant.

What is Salmorejo?

Salmorejo, a cold tomato soup traditional to Spain, is made with chopped hard-boiled eggs and ham. Salmorejo can be garnished in a traditional way with olive oil, but you can also add chopped hard-boiled egg and ham. You can also garnish it with watermelon and basil, or diced strawberries. You can also use chopped summer squash and zucchini with Italian parsley.

What is the difference between gazpacho and salmorejo?

Salmorejo, like Gazpacho is made from ripe tomatoes and garlic with olive oil. Salmorejo is a cold summer soup that has a silky texture and velvety body. The tomatoes are blended and strained with day-old bread.

It's funny how excited I am about sharing this recipe with all of you! It's so good I will be making 350 portions for a fancy Portland food festival this week. You'll want the best ingredients you can find, since the soup only has a few. Salmorejo is easy to make. Here are the ingredients you will need:

  • This cold summer soup is made with Tomatoes. As long as the tomato is ripe and flavorful, it will work. To add depth, I like to mix different varieties of tomatoes, such as grape, cherry and plum tomatoes, heirlooms, and beefsteak. This recipe is not for those who don't enjoy tomatoes.
  • Day Old Crusty White bread -- adds body and texture. Use a Baguette or Ciabatta. You can also use a Boule or Country Loaf. Use a loaf of bread that is not sliced, such as white or wheat. The dough's stabilizers and preservatives will cause the soup to become gummy. If the bread is still fresh, you can remove the crust and chop it up into large cubes. Place it on a baking sheet, then dry it at 250degF for 10 to 15 minutes, or until it becomes hard.
  • Olive Oil-helps flavor and gives the soup its velvety mouthfeel. You can use olive oil in this recipe if you like the taste of it. There's no way to disguise the taste with so few ingredients. Shop at your local grocery store to find great olive oil on a budget. You just need to know what you're looking for: extra virgin, cold-pressed and packaged in dark glass or metal containers. California Olive Ranch is a great budget-friendly option. Trader Joe's 365, Siple Truth and Bertolli also make excellent choices.
  • Vinegar -- Adds acidity. Use a softer, rounder vinegar, such as sherry or red wine. Skip the vinegar if your tomatoes are tangy or acidic.
  • Garlic_ Adds a lot of flavor. You can leave out the garlic if you do not like it. However, your soup will taste bland. Instead, try adding a tablespoon of chopped raw onion to the soup.

Salmorejo Recipes: Tips for Making them

  1. Use ripe tomatoes. The sweeter and more flavorful your soup will be, the riper tomatoes you use. Ripe tomatoes have a strong aroma, are heavy for their size and have firm, but slightly pliable flesh.
  2. Use bread that is at least a day old. If you need to, dry the bread in a 250degF over if it is fresh.
  3. Do not over-blend your soup as it will become gummy.
  4. Try different garnishes. Try other summer produce as a garnish. While the traditional is a drizzle of olive or chopped ham and hard-boiled egg, you can also use a sprinkle of fresh herbs. Salmorejo goes well with strawberries and watermelon. It also pairs well avocados, zucchini, summer squashes, bell peppers and fresh herbs such as basil, parsley and cilantro. Have fun and be creative!

What to Serve with Salmorejo

Salmorejo goes well with salads such as Creamy Cucumber Salad or Summer Sweet Corn Salad. It can be served with heartier dishes such as Tortellini Salad or Pasta Primavera.

How to Store Salmorejo

Salmorejo can be stored in a refrigerator in an airtight container for up to three days. Salmorejo can be frozen, but the flavor will be a little dulled. It can be frozen for up to six months, but the flavor will diminish the longer you freeze it. Components will separate when frozen, so mix again before serving. The soup should not be heated to defrost. You can either leave it out on the counter overnight or in the refrigerator.

Instructions

  • Chop the tomatoes roughly. Chop the cloves of garlic roughly. Add vinegar to water. Cut the bread into large cubes after removing the crust.
  • Put the tomatoes, bread, garlic and water in a blender. Blend until smooth. Don't over-blend as this will result in a gummy texture. Divide the ingredients into two halves and blend them in batches if you are using a smaller blender.
  • Slowly drizzle the olive oil into the blender while it is on low speed. Then, season the mixture with salt. Blend for about a minute or two, and if needed, season with salt. Cover the soup and place it in the fridge for 30 minutes.
  • Before plating, strain the soup through fine mesh sieve. You can use the ladle back to get it done quickly. Solids can be thrown away in the sieve.
  • Enjoy your favorite summer soup with a drizzle olive oil!

Salmorejo Recipe - Step By Step Photos

Chop roughly 3 pounds of tomatoes. Chop 2 large cloves of garlic roughly. Add 1/2 cup water and 1 tablespoon vinegar. Cut the crust off the pound crusty white loaf and remove the crust. If the bread is fresh, toast it in a 250degF over for 10 to 15 mins or until it becomes hard.

In a blender, combine the vinegar water with the tomatoes, garlic and bread cubes. Blend until smooth. Don't over-blend as this will result in a gummy texture. Divide the ingredients into two halves and blend them in batches if you are using a smaller blender.

Slowly drizzle 1/4 cup olive oil into the blender while it is on low speed. Then season with 1/4 teaspoon salt. Blend for a few seconds and add salt to taste if needed. Cover the soup and place it in the fridge for 30 minutes.

Before plating, strain the soup using a fine mesh sieve into a large serving bowl. You can use the ladle back to quickly remove it. Delete the solids from the sieve.

Plate the Salmorejo and drizzle the remaining tablespoon olive oil on top. Enjoy your new favorite soup for summer! You can also add a hard-boiled, chopped egg or sliced ham to your Salmorejo, if you wish. You can also add chopped summer fruits like bell peppers and zucchini. Strawberries, watermelon and basil are all good options.
