Have you ever had a hunger pang, but it wasn't so much about taste as it was about texture? Want something crunchy but don't want to reach for the chips? Crispy air-fried eggplant is a dish that is both delicious and healthy.
The crispy goodness of a veggie tempura with the warmth of an eggplant Parmesan, but without the grease. You know why? You know why? We use an air fryer for crispiness and deliciousness. This is similar to my air fryer recipe for onion rings -- a crispy veggie treat that's a zillion-times healthier (scientific truth), thanks the air fryer.
My kids, who were once skeptics about eggplant, now crave it at every family gathering. This dish combines comforting home cooking with the sinful goodness a deep-fried snack can offer without forcing you to break your diet. It's now your turn to dig into this delicious fusion of crunchiness, flavor, and healthful eats.
Air Fryer Eggplant - Is it Healthy?
We can say goodbye to tons of oil with our air fryer, and enjoy a lighter, healthier version to the classic fried enoghetti. The eggplant is also a healthy food, as it is packed with antioxidants and fiber.
Ingredients
You can find this eggplant in any supermarket.
- One large globe eggplant
- 1 egg, beaten
- 1/4 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 2 tbsp grated Parmesan cheese
- Black pepper and sea salt together
- Extra virgin olive oil
- Fresh basil leaves
Instrucciones
Prep
Pre-heat your air fryer at 350degF. Slice the eggplants into slices of 1/4 inch thick and sprinkle salt on both sides. Place the eggplant in a colander and let it drain for 30 min. In a small bowl, whisk the egg.
Combination
Combine the flour, panko, Parmesan cheese, black pepper, salt and other ingredients in a separate bowl.
The eggplant slices can be dried on a paper towel. Then dip them in the egg, and finally into the panko mix. Place the breaded slices of eggplant on a platter and drizzle some extra virgin oil over them.
Air Fry
Cook the eggplants for 20 minutes in an air fryer until they are crisp and golden.
Garnish
Transfer the eggplants to a serving plate, and top with fresh basil and olive oil.

If the cow is to be labeled "100% organic", all of its parts must have been organically fed.
Chicken should be only purchased from chickens raised on organic feed, and not given antibiotics. Chickens are omnivores. This means they can eat both plant and animal food. Omnivorous chickens have a digestive tract composed of a crop, proventriculus, gizzard, small intestine, large intestine, and anus.

I'll give you some tips about where to find organic meats at a low price and how much it costs per pound. Learn how to get maximum value from the products you buy.
It doesn't take a lot to eat healthy. Sometimes you need to be creative in order to save money and still eat healthy. Here are my top tips for keeping food costs down and still enjoying the many benefits of organic meat.
- Wholesale clubs - Sams Club, Costco, and Sams Club offer great deals on bulk foods like chicken breasts. If you are fortunate enough to live near one, you may be able get discounts up to 50 lbs on large quantities. This way, you won't waste any meat. You can also freeze the meat if you buy it bulk.
- Online shopping is a great way to find meat at a discounted price. Amazon has Prime Pantry, a weekly sale that offers free shipping for orders over $35. They offer discounts on beef roasts, ground beef, lamb steaks, and pork loins. You can browse their website and view what's on sale at different times.
- Find a local farmer - Local farmers usually charge less than big box retailers because they do not pay considerable fees to stock their shelves. Plus, they know exactly what their animals ate and drank, so they know exactly what's inside their bodies.
- Look for meat cuts that are leanest - Lean meat is generally cheaper to cook than fatty meat. The leanest cuts are therefore preferred. These include sirloin, tenderloin, top round, flank, and top-round steaks. These cuts have high protein and low fat.
