This Roasted Tomato Soup is so simple and elegant. This is the kind of recipe that makes you feel like a pampered guest, even though it's not a lot to do. To make tomato soup, you'll need the following ingredients:
- Fresh tomatos: When it comes to homemade tomato soup, the fresher the better! You will get the best taste if you use tomatoes that you have grown yourself or are locally-grown.

Pre-heat the oven to 400oF. Cut the tomatoes in quarters or halves depending on their size. Slice the onion into 1 inch wide wedges. Peel the garlic.

Sprinkle the salt and pepper, then drizzle with olive oil. Sprinkle the 1/8 pepper and 1/4 salt on top of the tomatoes, onions, and garlic. Drizzle with olive oil. Toss everything to coat it in oil.
