I always think of food fashion shows when I see vibrant vegetables wrapped up in a rice paper cover. These Rice Paper Wraps taste as good as they appear. While they may seem difficult to make, I promise you that in no time at all, you will be able to do it blindfolded.

You're probably wondering, How are these wraps different than your Sushi Burritos and spring rolls? Let me explain. Sushi Burritos are made with rice, meat and a few veggies. Spring rolls can either be fresh or fried and wrapped in rice or pastry. These wraps can be used as DIY salads on the go. Remember, the brighter the colors, the better your taste buds will be!

Are Rice Paper Wraps Healthy?

These Rice Paper Wraps make the perfect appetizer for anyone on a diet (and not just those who are). These rice paper wraps are full of nutrients and light. These veggies contain antioxidants, fiber and vitamins. The rice paper and vermicelli noodles give you the carbs that you want, without any guilt. As if this wasn't good enough, the wraps contain low fat and a moderate amount of calories. Enjoy!

Ingredients

Here's a simple list of ingredients to make an exotic treat. What you will need is:

  • Rice paper 4 sheets
  • Half a mango, cut into strips
  • 1 small cucumber, cut into strips
  • Half a carrot, cut into strips
  • 1 avocado, sliced
  • mint leaves
  • 1 oz. rice vermicelli noodles

Instrucciones

Prep

Wash and slice your vegetables. Follow the instructions on the package to cook the rice vermicelli noodles, and then let them cool.

Pour a large bowl of warm water into which you dip a piece of rice paper for 10 seconds, or until the paper becomes soft.

Fill

Layer your ingredients on top of the rice paper. Begin with a few lettuce leaves, then rice noodles, mint, and other vegetables.

Fold

Fold the sides of rice paper carefully over the filling. Then fold the bottom. Roll the spring rolls tightly. Serve spring rolls with the dipping sauces of your choice.

How to make perfect rice paper wraps

  • Dip the wraps in warm water and hold them there for about 10 seconds. The wraps should be soft but not too pliable. Remember that they will continue softening as you add the filling.
  • Filling is not necessary in large quantities. Over-stuffing will only make rolling more difficult.
  • Roll the fillings as tightly as possible .
  • I love mixing textures. The contrast between the soft rice noodles, crunchy vegetables, creamy avocado, and juicy mangoes is interesting.
  • To prevent the rolls from sticking together, I usually wrap parchment or plastic between each roll.

Where can I buy rice paper?

You don't need to go to an exotic market. Rice papers are usually found in the Asian aisle of your local grocery store. You can shop online if you don't want to make the trip.

Must I use all vegetables listed?

No, of course not! You can use as much of what you want. You can use any vegetables you like.

Can these wraps be stuffed with meat?

Absolutely! You can add cooked chicken, shrimp or tofu to our recipe for an extra protein boost. Remember to cut them thinly to make it easier to wrap.

What other cool twists can I try?

This recipe is a great one for experimenting. I've tried purple cabbage, bell peppers and bean sprouts.

What is the best dipping sauce to use?

The choice is really up to the dipper. It's hard to go wrong with classic Thai peanut sauce, spicy sweet chili sauce or an Asian salad dressing. If you're in a bind, try laying out several sauces to mix it up every time.

Serving Suggestions

These Rice Paper Wraps make a great light lunch or starter. Don't forget to add the dipping sauce. Serve these with my Banh Mi sandwich, a bowl or Chicken Pho, or a Fresh Corn & Mango Salad for a complete meal.

How to store and prepare paper wraps

It's easy to make rice paper wraps in advance. They can be covered with a paper towel or a moist cloth to prevent them from drying. Place them in the refrigerator and they'll last for two days. They might become a bit soft as they absorb moisture from the stuffing.

These are best eaten cold and fresh. If you really want to, you can take the wraps apart and stir-fry the fillings before putting them back together.
