Even on busy weeknights, you can serve a delicious and comforting meal to the family with this Pulled Pork casserole. This easy casserole bakes tender corn and black beans with a delicious sauce.
Serve it on its own or top with taco toppings like sourcream, grated cheddar, onions, tomatoes and taco sauce. This meal-in one pan can be made with leftover pulled pork, and it comes together as quickly as you can make your cornbread topping batter.

It's not a secret that I love pulled pork. Here on FWF, I have a recipe for pulled pork to suit every taste.
You can choose from Jack Daniels Pulled Pork or Mojo Pork. Dr. Pepper Pulled Pork is also available. Apple Cider Pulled Pork and Slow Cooker Honey Mustard Pulled Pork are other options. Or, you can purchase pulled pork at your local supermarket or barbecue joint. This easy and quick pulled pork recipe will become a regular in your kitchen.
Pulled Pork Enchilada Casserole
We'll go through the complete list of ingredients so that you can get what you need. It is easy to make and the ingredients are readily available.

- Buttermilk Cornbread batter or a box of Cornbread Mix
- Canned or cooked black beans

This is an easy way to use leftover pork, from shredded Boston Butt to pork shoulder or bbq. This casserole is a great way to use up leftover pork from your favorite recipes. Use only fully cooked, diced or shredded pork in this recipe.
This casserole is easy to customize to suit your personal tastes. Depending on my mood and what I have in the pantry that day, I use either enchilada or barbecue sauce.
Use a barbecue sauce you love because it will be the dominant flavour of your dish. Do you like Mexican-style pulled pork casserole? Choose an enchilada or enchilada-style sauce.
You can choose to use a homemade enchilada or a store-bought enchilada in either red or green. You can also change things up. This tasty casserole is an excellent way to use up leftovers like the half of an onion, a bell pepper that has aged, or a can of green chilies.
Pull-Pork Cornbread Casserole
Let's now get to the cornbread issue. I'm all for "Team No Sweet Cornbread", but I understand that this is a controversial issue.
You can use the recipe for my Grandma’s Buttermilk Cornbread to make this batter if you prefer your cornbread with a savoury taste. This recipe is utter perfection.
If you prefer a sweeter cornbread crust on your pulled pork cornbread, then feel free to use a box Jiffy Cornbread Mix (or any other brand of cornbread mix) as the topping for our casserole. As directed on the package, prepare the batter and pour it over the filling in the casserole as per the recipe.
You can substitute tater-tots in place of the cornbread layer if you don't like it (I know this is theoretically possible). Cook this the same as directed. You've just made a pulled-pork tater tots casserole!
It's not necessary to add toppings, but they are a great way to please everyone. You may enjoy some sourcream, grated cheese and homemade barbecue sauce, like I do.

Pull Pork Casserole
Pre-heat the oven to 425oF.
In a 9-inch x 13-inch pan, combine the black beans, corn, black bean sauce and pulled pork. Even it out gently. You don't need to get it perfect. Just about even is fine.
Pour or spoon out the cornbread batter over the pulled pork mixture. It is best to gently level it.
Bake the casserole in a 350 degree oven for 30 minutes. The cornbread should be golden brown, and the sauces on the pulled pork layer bubbly and hot. Allow it to stand for five minutes before serving.
Add desired toppings to the bowls after scooping out of the pan.

Do You Know How to Make Curry Paste?
Curry paste can be made with dried chillies. It's used extensively in Thai cuisine.
Curry paste is a very popular condiment in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.
It's not difficult to make at home! Follow our step-bystep guide below.
Step1 - Prepare Ingredients
- Before you start this recipe, make sure that all ingredients are prepared.
- Begin by peeling and cutting shallots into small pieces (about 2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
- Next, cut four garlic cloves into pieces. Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
- You can then crush the red chilli bell peppers into small pieces (about 4 tablespoons), and then you can remove the seeds (optional).
- Next, cut kaffir lime leaves into thin strips (about 5 inches long). Remove the white part of the stem and set it aside.
- After draining the shrimp paste, wash it well and then coarsely smash it.
- Final, weigh out salt and sugar.
Step2 - Grind Ingredients
- Mix all ingredients until well combined.
- The texture should be comparable to peanut butter.
- If you would like to reduce the amount oil in your dish, you could substitute water for some of it.
Step3 - Add Coconut Milk
- Mix the coconut milk into the mixture.
- Slowly add coconut milk to ensure that the paste doesn't become too sticky.
- For a milder taste, use less chillies and more galangal roots.
- You may prefer it hotter, so add more chilies or less galangalroot. The final result should taste delicious to you.
Step4: Serve
- Serve on top of your favourite foods.
- Enjoy!
