It would make me so happy to have these little veggie boats, and eat all the food I want.
I have to add that these are SO GOOD. I'm not a low carb person, but I LOVE them. Grilled zucchini also has a summery feel. The lemon zest and herbaciousness are also a great addition. This makes me not even a tiny bit angry that there aren't any carbs.

- Zucchinis
- Olive Oil
- salt
- Cayenne Pepper
- Onion, roughly sliced
- Asparagus
- Garlic
- Cauliflower Florets, cut into bite sized pieces
- Fresh Lemon Juice
- Fresh Basil, minced
- Fresh Shrimp, peeled & deveined
- Honey
- Lemon Zest
Which kind of shrimp is best for Zucchini Shrimp Boats
It's great to be creative when cooking for your crew. You can use different ingredients and spices, which will bring out the flavor and make your meal exciting. Fresh shrimp is best for this recipe. If you have frozen shrimp it will work just as well. Be sure to thaw the shrimp completely before cooking.
Shrimp Zucchini Boats
You may think it is difficult to prepare a recipe that is unique, flavorful and delicious. NOPE! This recipe is easy to make and tastes great! Here's how:
Heat
Place the grill basket onto the BBQ and heat it up on high for 10 minutes.
Prepare Zucchinis
Cut your zucchinis lengthwise, and scrape some of the interior to create a boat. Leave some of the zucchini in as it will soften during cooking. Sprinkle some salt and cayenne pepper on the zucchinis and brush them with olive oil.
Toss
Place the sliced asparagus and chopped onions in a large bowl. Pour the oil over the asparagus, then add the garlic and season it with salt and pepper. Toss them to coat evenly.
Grill the Veggies
Reduce the heat to medium high and place the asparagus and onions in the grill basket. Place the zucchinis cut-side down on the grill, next to the basket. Allow the vegetables to cook for about 10 minutes until they are charred. Flip the zucchinis half-way and stir the vegetables at the same. Once the vegetables are cooked, cover them and put them aside.
Rice the Cauliflower
Place the cauliflower in a large food processer and pulse until it resembles rice. Place the cauliflower in a large bowl that can be heated in the microwave for five to six minutes on high.
Grill the Shrimp
Reheat the grill to high. Pour oil, honey and pepper over the shrimp, making sure to coat them evenly. The shrimp should be cooked until they are nicely charred.
Add the chopped onion and asparagus to the cauliflower rice. Add the remaining olive oil and fresh lemon juice. Sprinkle the mixture with salt and pepper, and spoon it into the zucchinis. Add the lemon zest and shrimp to the top. Enjoy this shrimp zucchini and EAT it!
How to Grill Shrimp
Place your shrimp directly on the grill after you have tossed them in oil, pepper, and salt. They should be cooked until nicely charred, and they become opaque. Flip them half way through grilling. The shrimp has never tasted better!

- 2 large Zucchini Squashes
- 1 teaspoon Olive Oil
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cayenne Pepper
Cauliflower rice salad:
- 1 small onion Roughly sliced, about 2 cups
- 1 large bunch Asparagus
- 1 tablespoon Olive Oil Plus 1 teaspoon, divided
- 1 teaspoon Garlic Minced
- Salt and Pepper
- 2 cups Cauliflower Florets Cut into bite sized pieces
- 3 tablespoons Fresh Lemon Juice
- 3 tablespoons Fresh Basil Minced
Shrimps:
- 1/2 pound Fresh Shrimp Peeled and deveined
- 1 teaspoon Olive Oil
- 1 teaspoon Honey
- 1/2 teaspoon Ground Cayenne Pepper
- Lemon Zest For garnish
Instructions

Place the grill basket on your BBQ, and heat it up for 10 minutes at High.

Slice the zucchini lengthwise, and scoop some of the interior to make a boat. Keep some on the edges, as the zucchini will soften once it is grilled. Sprinkle salt and cayenne on the zucchini and brush with olive oil. Set aside.

Toss chopped onions and asparagus in a large bowl with oil, garlic, and salt and pepper.

Place the asparagus and onion into the grill basket. Lower the heat to medium. Place the zucchinis cut-side down directly on the grill. The vegetables should be cooked until they are nicely charred with grill marks, which takes about 10 minutes. Turn the zucchini in half and toss the vegetables around. Cover the vegetables and remove them from the grill. Set aside until you are ready to use.

While the vegetables are cooking, place the cauliflower in a large food processer and process it until it looks like rice. Place in a large bowl, and microwave on high for 5-6 mins until the cauliflower is tender. If you prefer, you can steam the cauliflower using the oven.

Reheat the grill to high. Sprinkle the pepper, salt, honey and oil over the shrimp, making sure that the spices are distributed evenly. Place the shrimp on the grill, and cook for about 5 minutes until they are opaque and nicely charred. Flip halfway through.
To Serve:

Add the onion and asparagus to the cauliflower rice. Add the basil, lemon juice, and remaining 1 tablespoon of olive oil. Salt and pepper to taste.

Place the shrimp on the top of the mixture. Garnish the dish with lemon zest.
