You can't go far wrong with my paleo sweet potatoes breakfast bowl or my quinoa breakfast baked with dates and bananas. What if I said that PANCAKES could also be a healthy and delicious breakfast? Yes, you heard me right! These apple oatmeal pancakes that I am about to share with you will change your life. Here's why:
- These pancakes use whole wheat flour. If you're looking for a healthier recipe, you've found it! These pancakes are made with whole wheat flour instead of all-purpose white flour.
- They are sweetened naturally. I chose not to use regular, refined sugar. I used a mixture of brown sugar and truvia to sweeten these pancakes. It's a healthier version of your favorite breakfast!
- These pancakes use greek yogurt:the greek yogurt contains probiotics, calcium and protein.

How to Freeze Pancakes
You're in luck if you accidentally made more pancakes than you needed or if you wanted to make extras for weekday breakfasts. This apple pancake recipe makes pancakes that freeze well. You can freeze each portion in separate ziploc freezer bags, and then pull one out as you need it.
Apple Cinnamon Pancakes
Place the pancakes on a plate that is microwave safe after removing them from the bag. Reheat them in the microwave on high for 30 to 45 seconds or until you reach your desired temperature.

Pre-heat your oven to 375degF. Spray a baking pan with cooking spray.

Mix together oatmeal, brown sugar, and flour in a large mixing bowl. Stir in the butter until it forms small crumbs.

Spread the mixture onto a baking sheet. Bake until golden, approximately 7-8 minutes.

After cooking, place the crumble topping in your oven at 200degF to keep it warm.
Pancakes for the Pancakes

Mix the flour with Truvia, baking powder, ginger, cinnamon, and salt in a medium-sized bowl. Set aside.

In a large mixing bowl, combine the egg yolks and yogurt.

Mix the dry ingredients with the apples and the liquid ingredients until they are moist but still slightly lumpy. Do not overmix. Allow the batter to stand for 15 minutes.

Spray cooking spray on your griddle and heat it to medium.

Drop the batter using a 1/3 cup measurement onto the heated griddle. Smooth with a wooden spoon.

Cook for 4-6 minutes, or until the edges are set and the bottom has a golden color. Repeat the flipping process. Continue to cook until the batter is finished, and then place any remaining pancakes in the oven to warm them.

Curry paste contains dried chillies and shallots, galangal roots, lemongrass (kaffir lime leaf), garlic, shrimp paste, sugar and salt. It is an important ingredient in Thai cuisine.
Curry paste is one the most loved condiments in Southeast Asia. It adds a unique flavour to many dishes, such as curries, soups, stir-fries, salads, rice dishes, noodles, and desserts.
It's not difficult to make at home! Just follow our step-by-step guide below:
Step1 - Prepare Ingredients
- You need to prepare all ingredients before starting this recipe.
- Begin by peeling and cutting shallots into small pieces (about 2 cups). Next, chop galangal root into small pieces (3 inches in length) and place aside.
- Next, you will need to peel and slice the garlic cloves (about 4 cloves). The lemongrass stems should be roughly 1/2 inch thick.
- Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
- Next, trim the kaffir lime leaves into strips about 5 inches in length. The white part of your stem should be removed and put aside.
- After that, wash and drain shrimp paste (about 6 ounces), then coarsely mash it.
- Finally, measure the sugar and salt.
Step2 - Grind Ingredients
- Blend all ingredients together until smooth.
- The texture should look similar to peanut-butter.
- Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.
Step3 - Add Coconut Milk
- Add coconut milk to the mixture and mix well.
- Slowly add coconut water to prevent the paste from getting too sticky.
- If you like it milder, reduce the number of chillies used and add more galangal root.
- You may prefer it hotter, so add more chilies or less galangalroot. The final product should be tasty to you.
Step4 – Serve
- Top with your favorite food.
