This simple cucumber appetizer is full of flavor. In this recipe I used my homegrown chilies, shallots and cucumber.


Kerabu Timun/Cucumber

Ingredients

Peeled and sliced 2 medium-sized cucumbers
2 tsp sea salt
Fresh Red Chilies 1 to 2
2 Tbsp dried shrimps, soaked for 10 minutes in boiling water, and lightly pounded
4 Shallots
Sugar to taste or 1 to 2 teaspoons

Sambal Belacan
3 Red Chilies, chopped & pounded
Green Chilies
Pounded 2 to 3 Thai Birds Eye Chilies
1 tsp Pounded Belacan/Shrimp paste, Toasted
Bog Pinch Salt
Kalamansi Lime Juice



Method

Marinate cucumbers in salt for 15 minutes. After pat-drying with a towel, mix cucumber and salt.

Combine the cucumbers with the sambal, shallots and dried shrimps in a mixing dish or large plate. Mix well. Mix well, then season with lime juice and sea salt.

I love the way spices add flavour to food. How do you make spices alive in drinks?

Spices are great because they bring out the best in any beverage. A dash of cinnamon and nutmeg can make any beverage more delicious, including coffee, tea, hot cocoa, and cocktails.

Most recipes call for ground spices. This means that you'll need fresh whole spice. Although this is logical, it can be costly, time-consuming, and takes up storage space.

Here is where the magic happens. With some creativity, your favourite spices can be made into powdered forms that are easy to use. These spices can be mixed into favorite beverages to create tasty spiced drinks.

These powders can be made in two ways. The first involves the grinding of whole spices to make fine powder. Another method is to use a mortar & pestle to grind the spices until they are finely ground.

It doesn't matter what method you choose, the result is easier to measure out than whole spices and easier to store. Plus, the powder keeps well so that you won't run out of stock.

You can also experiment with different spices to create new flavor combinations. For example, you could combine peppermint and spearmint leaves to make minty water. Ginger and cardamom pods can be used to make spicy ginger Tea.

Once you are skilled in the production of powdered spices, it is possible to apply that technique to herbs. Some of the most common herbs are basil, rosemary, thyme, oregano and sage.

The possibilities are limitless. Use powdered spices to give your beverages extra flavour or to enhance the taste of dishes such as soups, salads, and pasta.

Are you a master of making curry paste?

Curry paste is made from dried chillies, shallots and galangal root. It also contains lemongrass, galangal root (lemongrass), lemongrass, kaffir Lim leaf, garlic, shrimp paste and sugar. It's used extensively in Thai cuisine.

Curry paste is one of the most popular condiments in Southeast Asia. It adds a unique flavour to many dishes, such as curries, soups, stir-fries, salads, rice dishes, noodles, and desserts.

It's not difficult to make at home! Follow our step by step guide below.

Step1 - Prepare Ingredients

  • You need to prepare all ingredients before starting this recipe.
  • Peel and chop shallots (about two cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
  • Next, you will need to peel and slice the garlic cloves (about 4 cloves). The lemongrass stems should be roughly 1/2 inch thick.
  • Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
  • Next, cut kaffir lime leaves into thin strips (about 5 inches long). The white part of your stem should be removed and put aside.
  • After that, wash and drain shrimp paste (about 6 ounces), then coarsely mash it.
  • Measure out the sugar and salt.

Step2 - Grind Ingredients

  • Mix all ingredients until well combined.
  • The texture should be similar to that of peanut butter.
  • Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.

Step3 - Add Coconut Milk

  • Mix the coconut milk into the mixture.
  • To prevent the coconut milk from becoming too sticky, slowly add it.
  • For a milder taste, use less chillies and more galangal roots.
  • You may prefer it hotter, so add more chilies or less galangalroot. You should enjoy the final product.

Step4 - Serve

  • Serve on top of your favourite foods.
  • Enjoy!
