In Taiwan, this dish is called Lu Rou Fan or Braised Meat Over Rice. This braised pork in Chinese style is delicious and addictive. Enjoy the slow-cooked meat with plenty of steamed white rice. Add some simple salted scallions for a more flavorful meal. Give this recipe a go and have fun!
Braised Meat over Rice (Lu Rou Fan).
Ingredients
Pork Belly 600-650g, cut into smaller pieces as shown in the video
Hard-Boiled Eggs 4 to 6
5 Tbsp Fried Scallions
1/2 tsp Five Spice Powder
3 Slices Kam Cho/Liquorice Sticks
2 tsp. Sugar
White Pepper Powder, 3/4 to 1 tsp
Shaoxing wine, 5 Tbsp
5 Tbsp light soy sauce
Dark Soy Sauce, 4 Tbsp
Use 2 1/2 cups water or Pork/Chicken stock
Peanut Oil for cooking
Optional*
Scallions Salted
180 grams Green Onion/Scallions, chopped
Sea Salt 1 tsp
Method
Pork belly can be blanched in boiling water for 8-10 minutes. Remove the pork belly, wash it, then dry it and allow to cool for 20 minutes. Cut into thin strips and thin slices.
Heat a large wok over high heat. Add approximately 1 1/2 to 2 Tbsp peanut oil. Add the meat when the oil is hot. Stir-fry and cook the meat for 6-8 minutes or until it is golden brown.
Add the wine and then add the light soya sauce, dark soya sauce, sugar, liquorice, and white pepper. Stir-fry for 2 to 3 minutes until fragrant. Add fried shallots and stir quickly. Add the water and bring to a rolling boil. Cover the pot with a lid, turn down the heat and let it simmer for an hour and a half. Add the hard-boiled egg and simmer for an additional hour.
Salted Scallions are ready: Combine the chopped scallions and salt, and let them marinate in the fridge for 10 minutes or more.
Serve the rice with the salted scallions and some meat sauce.
