This salad is far from boring. This salad is loaded with romaine lettuce and radicchio, cubed cheese, Italian salami, and vibrant red wine vinegar.

This salad is not complete without the homemade dressing. Ingredients are also limited to pantry staples: extra virgin oil, red wine vinaigrette, Dijon mustard, garlic, oregano, and crushed red pepper flake for a bit of heat if desired.

The best part is? Prep time is kept to a minimum as there is zero cooking involved and everything can be diced/prepped/assembled beforehand. To ensure maximum freshness, toss the salad just before serving. Don't forget the freshly shaved parmesan cheese to finish off your salad!

Ingredients

  • 1 head romaine lettuce roughly chopped
  • 1 cup chopped radicchio lettuce
  • 8 ounces fresh mozzarella cut into 1/4-inch cubes
  • 4 ounces dry Italian salami cut into matchsticks
  • 15-ounce can chickpeas washed and drained
  • sliced Black Olives washed and drained
  • 1 yellow bell pepper diced
  • 1/2 English cucumber diced
  • 6 pepperoncini sliced
  • 1 cup halved grape tomatoes
  • 1/3 cup chopped red onion
  • 1/2 cup shaved Parmesan

Dressing

  • 1/2 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 clove garlic grated
  • 3/4 teaspoon dried oregano
  • 1/8 teaspoon crushed red pepper flakes
  • Kosher Salt and freshly ground Black Pepper To taste

Instructions

  • Place romaine, radicchio, and chickpeas in a large serving bowl. Add the mozzarella, olives and other ingredients. Pour the dressing over the salad, and gently mix to combine. Add Parmesan.

Dressing

  • In medium bowl, whisk olive oil, Dijon mustard, garlic, oregano, and red pepper flakes; season to taste with salt and black pepper.

In this post I'll share some tips and techniques for buying organic meat that won't break the bank.

I'll give you some tips about where to find organic meats at a low price and how much it costs per pound. This will teach you how to get the most out of your purchase.

It doesn't take a lot to eat healthy. Sometimes, you have to use your creativity to save money while still eating well. Here's my list to help you keep food costs low while still enjoying all the health benefits of organic meat.

  1. Buy at wholesale clubs - Costco and Sams Club are great places to shop for bulk foods like chicken breasts and pork chops. If you are fortunate enough to live near one, you may be able get discounts up to 50 lbs on large quantities. This ensures that meat is not wasted. Also, if you buy in bulk, it can be frozen so it lasts for longer.
  2. Shop around online - Tons of websites sell meat at discounted prices. For example, Amazon has a weekly deal called Prime Pantry, which includes free shipping on orders over $35. They offer discounts on beef roasts, ground beef, lamb steaks, and pork loins. It is easy to browse their website and check out what is on offer at different times.
  3. Local farmers often charge less than big box retailers due to the fact that they don't have large overheads for stocking their shelves. Local farmers also know exactly what their animals have eaten and drank so they can determine what's in their bodies.
  4. Choose lean cuts of meat - It is usually cheaper to cook lean meat than fatty. You should always look for the best cuts. These include sirloin, tenderloin, top round, flank, and top-round steaks. These cuts are very low-fat and high in proteins.
  5. Try new recipes - Don't be afraid to try new things! Start cooking with ingredients that you have never used before. This is one of the easiest ways reduce your grocery costs.
