Here's a quick and easy way to make authentic Hakka Rice Pin Noodles, also known as Rat Tail Noodles or Loh Shee Fun! Rice pin noodles are traditionally made from soaked ground rice. This method is similar to that I demonstrated in my previous video on how to make rice cakes. The recipe only requires two ingredients: rice flour and water. You'll be surprised by the results, which will be soft, chewy, and bouncy noodles! The video below will show two different methods. The first method involves kneading the dough and shaping it manually. The second involves mixing the dough using a machine, and pushing the dough down with your heel. The end results of both methods are equal in terms of taste and texture, even though one might look better. These noodles can be used in many different ways, from soup to stir-fry or even mixed with a meat sauce. (As shown in my video which I'll link in the description box on YouTube!) Enjoy!

Frequently Asked Questions

How to store your spices?

Keep them out of the sun and heat.

If you want to keep spices fresh for a long time, place them into a dark cupboard. This will help preserve the spices and prevent oxidation.

Your spices should be kept in cool and dry areas, away from direct sunlight. If the spice is placed near a heater or window, it may lose its flavour and aroma.

Spices need to be kept in an airtight glass container or tin. If you are storing your spices in plastic containers, ensure there is no moisture.

As humidity can cause mold growth, it is important to check the seal before opening or resealing.

Do not throw away any spices that you have left over. Instead, use them up by adding them to other dishes. They can be frozen to prolong their shelf-life.

What is Thai cooking's most famous ingredient?

In Thailand, two main ingredients make up the heart of all dishes: rice and curry. This is how you get an unforgettable flavor.

Combining these two basic foods into one dish is known as "Khaopad Krai" in Thailand.

The same goes for life. It is possible to achieve great success by combining the two key ingredients of hard work, perseverance, and determination.

As Khao Pad Krai did, passion and purpose can be combined to make you successful. When you combine these ingredients, you can create something remarkable.

If you find yourself craving Thai food, keep in mind that Thai food is more than rice and curry. You'll be amazed at how much fun you can have experimenting with different ingredients!

Can garlic be used in Thai cooking

Garlic is an ingredient used in Thai cuisine. Garlic is used in Thai cuisine as an ingredient in salads, soups and stir-fries.

In Thailand, garlic is chopped and fried with shallots, ginger, and spices. In addition, it is commonly eaten with sticky rice.

It is common to mince garlic and then mix it with chili paste, salt, fish sauce and lime juice. This mixture is known as Nam Phrik (namphrik). Nam Phrik is often served alongside grilled chicken, beef, or pork.

Do You Know How To Make Curry Paste?

Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It is widely used in Thai cuisine.

One of the most widely used condiments in Southeast Asia is curry paste. Curry paste can add a distinct flavour to many dishes like curries.

It is very easy to make it at home. Follow our step-bystep guide below.

Step1 - Prepare Ingredients

  • Before you can start the recipe, it is important to have all the ingredients ready.
  • To begin, you will need to peel and chop shallots (about 2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
  • Next, remove and cut the cloves of garlic (about four cloves). Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
  • Then, crush dried red chilli peppers (about four tablespoons) and remove the seeds (optional).
  • Cut the kaffirlime leaves into small strips, approximately 5 inches in length. Set aside the white portion of the stem.
  • After that, wash and drain shrimp paste (about 6 ounces), then coarsely mash it.
  • Final, weigh out salt and sugar.

Step2 - Grind Ingredients

  • Blend all ingredients together until smooth.
  • The texture should look similar to peanut-butter.
  • If you would like to reduce the amount oil in your dish, you could substitute water for some of it.

Step3 - Add Coconut Milk

  • Mix coconut milk with the mixture.
  • Add coconut milk slowly so that the paste does not become too sticky.
  • If you prefer less spice, add less chillies to the recipe and more galangalroot.
  • For a more spicy taste, increase the amount of chillies and reduce the use of galangal root. The end result should be delicious.

Step4 - Serve

  • Top your favorite foods with this topping.
  • Enjoy!
