Banana Bread is a family favorite. This evening, I would like to share with you a quick and simple recipe. It tastes great because it contains lots of chocolate chips and a splash of rum. Yummy!


Banana Bread with Chocolate Chips or Chocolate Chips

Ingredients

Dry Ingredients
All-Purpose flour, 1 1/2 cups (225g),
1/4 tsp baking powder
Fine Sea Salt, 1/4 tsp
Baking Soda, 1/2 tsp

Wet Ingredients
3 Ripe Bananas (about 635 g/yield 440 g)
Light Brown Sugar, 1/2 Cup (80g),
1/3 Cup (75 g) Unsalted Butter, melted
Dark Rum, 1 Tbsp
1 tsp Vanilla Extract
Eggs 1 Large
3 Tbsp Plain Yogurt
1/2 Cup (100 g) Semi-Sweet Chocolate Chips, melted



Method

Pre-heat the oven to 180@C/350@F. (Middle rack)

Butter a 8.5 x 5 inch loaf pan.

Combine the baking powder, salt, and baking soda with the flour.

In a large bowl, mash the bananas. Mix sugar, butter melted, rum vanilla, egg and yogurt using a rubber spatula. Fold the dry ingredients lightly into the wet until they are just combined. Pour the chocolate into the banana mixture and fold it in gently, approximately five folds. Pour the batter in the loaf pan, and bake it for an hour to one hour and ten minutes or until the top is golden brown. Remove the bread from the pan and place it on a rack to cool down for 10 minutes. Let the bread cool completely before serving.

Another popular healing herb is Echinacea. Echinacea is known for helping to fight infections and boosting the immune system.

Echinacea is commonly taken internally and externally to fight infection, prevent viral diseases, and boost immunity. It is safe to use during pregnancy and lactation.

Echinacea also helps reduce muscle pain and inflammation. You can take echinacea orally or topically (as an ointment).

This herb is available in both liquid and capsule form. Liquid echinacea is often mixed with honey and lemon juice. The mixture is then strained and consumed.

Capsules are usually made of freeze-dried plant material. They contain standardized amounts of active ingredients. To use capsules, swallow one or two a day.

Add honey to the boiling mixture to make a tonic drink. Honey is a preservative and will keep your herbal remedy fresh for longer.
