Crispy fried chicken served with a honey glaze and the fluffiest waffles ever!
It's not easy, but it is worth the effort (of about 45 minutes). The end result is worth the effort.
Crispy chicken (breasts and thighs are both acceptable) drizzled in a warm honey sauce, with the best buttermilk-waffles you can imagine - crispy on the outside but fluffy in the center.
Warm maple syrup is also a great alternative to honey if you don't like it.
A warm oven at 200 degrees will keep everything warm while you prepare the rest. You can serve this for breakfast, or even better, for dinner.
Honey Fried Chicken with Waffles
Ingredients
Buttermilk Waffles
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 2/3 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter melted
For the chicken
- 1 1/4 cups all-purpose flour
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon cayenne pepper
- Kosher Salt and freshly ground Black Pepper To taste
- 2 lbs skinless, boneless chicken breasts cut in 1 1/2-inch pieces
- 2 cups buttermilk
- 6 cups vegetable oil
- 1/4 cup honey warmed
Instructions
Buttermilk Waffles

Pre-heat the oven to 200 degrees F. Heat a waffle maker to medium heat. Waffle irons should be lightly oiled on the bottom and top or coated with nonstick spray.

Combine flour, sugar and baking powder in a large bowl.

Buttermilk, eggs, and butter should be whisked together in a large measuring cup made of glass or another bowl. Pour the mixture over the dry ingredients, and stir with a rubber spatula until moist.

Pour about 1/2 cup of buttermilk mixture in the waffle iron. Close gently, and cook for 4-5 minutes until golden brown. Keep warm in the oven.
For the chicken

Combine flour, cornmeal and baking powder in a large bowl. Add 2 teaspoons of salt, 1 teaspoon of pepper and cayenne.

Dredge each chicken piece in the flour mixture. Dip into buttermilk and then coat with flour mixture.

Heat oil in a Dutch oven or large stockpot over medium-high heat until the thermometer reads 360 degrees F.

Add the chicken in batches and cook until golden brown. Turning it occasionally is a good idea. This should take about 4-5 mins. Transfer the chicken to a baking tray fitted with a rack. Keep warm. *

Serve with waffles drizzled with honey.
