This week's episode is all about healthy, trendy and delicious food to feed your face.

Who else loves the bowl food trend. Recently, I made Vegan smoothie bowls as well as Spaghetti Squash Bowls and Fish Tacos Bowls. You can find all sorts of bowls. All the cool kids do them. My favorite is this Chipotle chicken Burrito Bowl copycat.

Mexican food is my favourite cuisine and Chipotle has to be one of my favorites food chains. Who doesn't like a semi-healthy Mexican meal? When I'm looking for a healthier alternative and want to remove the extra calories from the tortilla I choose the Chipotle Burrito Bowl, which includes chicken (or sofritas), rice with cilantro and delicious fajita vegetables. I created a copycat Chipotle Burrito Bowl and it may be my favorite easy and quick recipe!

What is a chipotle burrito?

Chipotle Burrito Bowls are basically all of the fillings from a burrito wrapped up in a bowl, instead of in a tortilla. This option is often chosen by people who want to remove the extra calories from a tortilla. This is a great alternative for those who are gluten-free. You can customize the fillings to your liking, just like you would with a burrito, by adding your favorite meat, vegetables, salsa, etc.

Does make the Chipotle burrito bowl healthier?

Chipotle, although a fast-food chain, is often viewed as a healthier option due to the fact that you can customize a meal using healthier ingredients. They also claim that they make their food daily, with fresh ingredients and no artificial additives. The bowl is not made with a tortilla, which has a high carbohydrate content. Instead, you can fill it up with rice, beans, other vegetables, etc. This makes it a healthier alternative to a burrito.

How much calories are in a burrito chipotle bowl?

The calories in a chipotle bowl can vary from 400 to 1,000 depending on what you add. The calories in the bowl will rise if you add cheese, rice, and guacamole.

If I'm watching my carbs I order a burrito with chicken, guacamole and romaine lettuce. I also add fresh tomato salsa, some sourcream, but no rice. This adds up nicely to 440 calories and only 5g net carbs.

My go-to chicken bowl is made with brown rice, guacamole and fresh tomato salsa, along with romaine lettuce. The 760 calories and the 41g net carbs make it feel heavier, but it's so delicious!

Tips for making Chipotle's burrito bowls healthier

  • Olive Oil Instead of sunflower oil or butter to cook the poultry, use olive or olive oil spray. This will help keep the calories down.
  • Cauliflower rice -- Instead of using brown or white rice with cilantro, cauliflower rice is a healthier alternative. It's delicious and low in carbs, making it a healthy option.
  • Guacamole_ If you are looking for a healthier alternative, you can replace the traditional toppings of sourcream and cheese with guacamole.

How do you store a Chipotle Burrito Bowl?

You can store leftovers of your Chipotle Burrito Bowl in the refrigerator for 3-4 days if you've already assembled it. When you are ready to eat the Chipotle Bowl, take it out of your fridge and enjoy it at room temperature. Some ingredients, like guacamole, may not be able be heated up in the microwave.

The trick I use is to not assemble the bowl but instead store all ingredients separately in containers in the refrigerator. You can reheat the food whenever you like.

Ingredients

  • 1 Tbsp + 1 Tsp Olive oil divided
  • 8 Oz Chicken breast
  • 2 Tsp Seasoning for tacos This is the recipe I always use to make my own
  • 2 1/2 Cups Cauliflower cut into bite-sized pieces
  • 1 small Red bell pepper Thinly sliced
  • 1/2 cup small onion thinly sliced (about 3/4 )
  • 2 tsp Fresh garlic minced
  • Salt and Pepper
  • 2/3 cup corn If frozen, do not add to the paleo diet
  • 1/4 Cup Cilantro minced (or more to taste)
  • Add one extra large lime to the juice of one, plus additional for garnish
  • 6 Tbsp Salsa of your choice
  • 1/2 small avocado chopped into cubes

Instructions

  • Heat your oven to 350°F and 1 tsp. of olive oil in a large oven-safe pot on high heat.
  • Taco seasoning should be sprinkled on both sides of each chicken breast. Rub it in well.
  • Place the chicken in the pan and sear it until golden brown. This should take about 1-2 mins. Repeat until the second side is golden brown. Place the chicken in the oven for 20-25 minutes until it is no longer pink.
  • Place the cauliflower in a food processor, and pulse until it is "rice-like".
  • In a large saucepan, heat 1/2 tbsp remaining olive oil on medium-high and add the cauliflower. Cover the cauliflower and cook it, stirring every so often, for 7-10 minutes.
  • Heat the remaining 1/2 Tbsp olive oil on medium high heat in a large pan. Add the onion, garlic and pepper slices. Add a pinch of pepper and salt. Cook until golden brown. This takes about 3 to 5 minutes.
  • The corn kernels should be charred and blackened in a grill pan that is dry. This will only take a few minutes.
  • Add the cilantro and lime juice to the cauliflower rice in a large bowl. Season with a pinch more salt and pepper. Stir until well mixed.
  • Divide the cauliflower into two bowls. Then, divide the corn and pepper/onion mixture between the bowls. Divide the chopped avocado and salsa between the two bowls.
  • Place one cooked chicken breast in each bowl and then squeeze another fresh lime juice over it. *
  • Add salt and pepper according to your taste.
