Recently, I published a recipe of Buddha Bowls. In the recipe, I extolled these bowls as being versatile, nutritious and filling. As a base, I used Quinoa. This recipe for Soba Noodles substitutes the quinoa in this dish with -- you've guessed it! -- soba noodles. It also simplifies the ingredients list, but that's what I'm referring to right now. Sooo ...). This Soba noodles recipe will then give those ingredients Asian flavors to make your taste buds happy, and your body feel energized.

What is soba noodles?
Soba noodles are made in Japan, usually from buckwheat. Have you ever noticed their earthy, nutty flavor? Buckwheat is the culprit! The pastas are grayish brown and slightly chewier than other pastas. Don't overcook the pastas thinking that they need to be softened. These noodles are a healthier option than wheat-based pastas such as ramen, udon or spaghetti. They contain more protein and fiber.

- 1 clove of minced
- Honey 1 tsp
- 1 tsp rice vinegar
The Noodles
- 6 oz soba noodles
- 1 avocado
- 1/4 cup edamame, cooked
- 1 tsp of lemon juice
- 1 cup cooked sugar peas
- Four small red radishes , sliced
- Fresh mint leaves in a bunch
- Black and white sesame seeds
Instrucciones
The Dressing
Grate the ginger and chop the garlic. In a small bowl, combine the honey, vinegar, sesame, soy, and sesame sauce. Set aside.
Slice
Peel the skin and remove the pit from the avocado. Slice the avocado, and squeeze lemon juice on the slices. Set aside.
Boil
Bring water to a rolling boil. Follow the instructions on the package to cook the soba. Drain and rinse the Soba noodles under cold water to remove the starch.
Toss
Mix the noodles in the dressing.
Combination
Transfer the noodles to bowls along with the sugarpeas, edamame radish and avocado.
Garnish the salad with mint leaves and sesame seeds. Dress the salad with more dressing.
