This Mexican corn salad with avocado ranch dressing is made with tomatillos! This gluten-free side is only 125 calories.

Now that I was in the States, I decided to try and embrace the Mexican culture. I wrote myself a checklist of what I needed to do to achieve this.

  1. Buy a Sombrero
  2. Wear the sombrero with your husband (he hasn’t seen this list yet

  4. Siesta every afternoon. (Also my boss hasn't yet seen this list)
  5. Tomatillo is a great ingredient to use in a variety of dishes.

This recipe is number 5 on the list. I'm currently working on the remaining 4. They will happen. They are sketchy people. I don't wish to die on my quest. Or even worse, food poisoning.

As I mentioned earlier, I have completed one item on my list. These little green guys made me nervous. I'm always a little hesitant when I see them at the supermarket. They look like under-ripe tomatoes with a crusty, gross skin hanging off.

You know I made you want them.

However. Since they are always on "Chopped", my favorite TV show, I assumed that people would eat them. Like every Mexican recipe on the planet includes them.

You get the idea.

Since I want to assimilate into US culture by eating everything Mexican, I purchased some. I was making a side dish to take to our church picnic and decided to try them out. It's the perfect time to test out new recipes at a church picnic because everyone is so friendly and you can feel good about your creation.

Anyways.

I brought the tomatillos home with a bit of trepidation. After removing the strange skin and cutting them open, I was pleasantly surprise. They are MUCH firmer than tomato, which I LOVE. It's so frustrating to cut into a tomato because it squishes all over the place. - A tomatillo does not squish.

You're left with the outer shell of what was once a tomato. It's so sad.

I tried one. It was pretty good. These are very crunchy but not as sweet.

How do you eat tomatillos? I did some research on Google and found out that there are several ways to eat a tomatillo:

  1. Cooked
  2. Raw

It's mind-blowing, I tell you!

After removing the sticky residue, I decided to use them "raw" in this Mexican Grilled Corn Salad. This is similar to the Mexican Corn Salad With Honey Lime Shrimp except that it fulfills my "eat a tomato" goals.

Do you remember my put-creamy-sauce-on-everything-but-make-it-healthy phase?? It's still happening. Avocados are also great with Mexican food, such as the chicken burrito for meal preparation, which I've been eating on repeat. AND they're super creamy.

The result was a delicious combination of crunchy tomatillo, creamy avocado, and little pieces of corn and onions. The taste buds really did a happy dance.

All of it was eaten at the picnic. People won't eat anything that isn't tasty.

Grilled Mexican Corn Salad With Tomatillos

This Mexican grilled corn salad is dressed with avocado ranch dressing and tomatillos! This gluten-free side is only 125 calories.

Ingredients

  • 2 Cups corn kernels (thawed)
  • 1 Red onion chopped
  • 4 Large tomatillos roughly chopped.
  • 1/2 Cup Cilantro minced.
  • Sea Salt to taste

Dressing:

  • 1/2 A small avocado
  • 2 Tbsp fresh lime juice
  • 1.5 Tsp adobo chile sauce see note
  • 2 Tbsp Powdered ranch dressing mix
  • 1/2 Tbsp garlic minced
  • 1 teaspoon taco seasoning with reduced sodium
  • Use a pinch of stevia or any other sweetener that you prefer. )

Instructions

  • Spray the grill pan with cooking oil and heat it on high. You could also use a grill or bbq pan.
  • Chop your red onion tomatillo and cilantro while the pan is heating up.
  • Stir the corn and red onions regularly to prevent them from burning. It took me around 10 minutes for my grill marks to be really good.
  • Mix all dressing ingredients together in a food processor while your corn and red onions are cooking. Processing until everything is smooth and well mixed.
  • After you've grilled your vegetables to the desired level, combine them with tomatillos (roughly chopped) and cilantro.
  • Stir the dressing into everything and mix until it is all coated.
  • Serve with sea salt or pepper.

Notes

I used the sauce from the can of chipotle chiles in adobo. This is optional, but the spice will not be as strong. If you cannot find adobo, you can also use chipotle powder. I haven't tried this so can't speak to the results.

What are my top priorities when buying organic products

Look for USDA-certified organic labels. This guarantees that the product meets certain USDA standards. On all packages, boxes and cartons, look for the USDA Organic seal.

When purchasing meat, ensure it is 100% organic. Cattle are ruminants. They eat the whole animal. Ruminant cattle have 4 stomach compartments: Rumen, reticulum and omasum. If the cow is to be labeled "100% organic", all of its parts must have been organically fed.

You should only purchase chicken that has been raised organically. It must not have ever been treated with antibiotics. Omnivore chickens eat both animals and plants. Omnivorous chickens possess a digestive tract made up of a crop.

It is important to ensure that dairy products are from cows that were fed 100% organic feed. Just like ruminants have four stomachs, dairy cows have four. The fourth stomach compartment--the cow's udder--is where milk is produced.

Check the label when purchasing livestock of any other type to find out what percentage was used in the animal's diet. A label for pork might say "95% organic", which means that 95% of the feed used by the pork came from organic sources.
