I'm a big fan of protein treats. You will find everything here, whether it's homemade paleo bars or classic protein foods like coconut protein cookies.

It's mainly because I am obsessed with getting enough proteins (always start my day with oats protein) but I also love the challenge of creating desserts that are actually delicious with protein powder.

What about these cookies? OMG a mega yum.

There are sprinkles. You don't even have to ask yourself how good they are.

Combine them with a protein shake made of chocolate and you're on your way to muscle city!

My favorite recipes are homemade protein bars, protein peanut butter cups and pumpkin protein bars that not only taste great but also provide the nutrients our bodies require. These high-protein cookies are packed with protein and made from healthier ingredients. They are also delicious! Incorporating a healthy amount of protein in your diet can have many health benefits:

Ingredients Required

Ingredients for baking healthy protein cookies include whole, healthy ingredients you can feel good about feeding to your family. Desserts that are good for you and also keep you full AND give you energy! Gather your ingredients and let's get started!

  • Cashew Butter
  • Honey
  • Organic Butter Extract
  • Eggs
  • Vanilla Whey Protein Powder
  • Baking Soda
  • Rainbow Sprinkles

Protein cookies

Prepare

Start your oven while you are working. Set aside a cookie tray lined with parchment paper.

Blend

Melt the butter in a microwave-safe bowl. Blend the butter extract, honey, and honey with an electric mixer until smooth. Add the egg, and continue to beat.

Stir

Stir in the baking soda, salt, and protein powder until you get a doughy ball.

Roll

Pour your sprinkles on a large plate with a rim. Roll the dough into small balls, and then roll the sprinkles over them until the balls are completely covered. Place the cookies on the cookie sheet.

Bake

Bake the cookies after pressing them down a lot. Bake until the cookies are set. Then, let them cool completely and then EAT!

Top Tips for making Protein Cookies

  1. Weighing the protein is essential because you will be able to ensure that you don't use excessive amounts. Too much protein powder can result in dry cookies.
  2. Use Nut Butter that Doesn't Separate: Cashew butter with no stirring is best, because it doesn't separate the oil!
  3. It is ok to bake the cookies until they are JUST set. They will harden! Pull them as soon as they are JUST set so that they will still be chewy.

Recipe Variations

You can modify this recipe to fit your needs and preferences. You can modify this recipe in a number of ways:

A Different Protein Flavor: Although I used vanilla protein, you could totally use a strawberry or chocolate flavor! It would be great to use chocolate protein powder with sprinkles, or strawberry and sprinkles.

Nut Butters: I used cashew or almond butter for this recipe. However, peanut butter or almond butter would be equally delicious!

How to store cookies

To store these cookies, let them cool down completely before placing them into an airtight container. Store them at room temp for 2 to 3 days.

How to Freeze

These cookies can be stored in an airtight freezer bag or container for up to three months. Thaw them out and enjoy when the urge strikes!

How To Reheat

Do not put them in the microwave as they will become dry! You can thaw them on the counter about an hour before you plan to eat them. Enjoy!

Ingredients

  • 1/2 Cup Cashew butter
  • 2 Tbsp Honey
  • 2 tsp Organic Butter extract
  • 1 Large egg
  • Half Cup Vanilla Whey Protein Powder
  • 1/4 tsp Baking soda
  • A pinch of salt
  • 1/3 Cup Rainbow sprinkles

Instructions

  • Pre-heat your oven to 325°F and line the cookie sheet with parchment or silpat.
  • Melt the cashew-butter in a large microwave-safe bowl until it is creamy and smooth. This should take about one minute.
  • Mix the cashews with the honey butter extract using an electric mixer.
  • Beat the egg until it is well blended.
  • Add the baking soda, salt, and protein powder to the bowl. Stir until a wet, sticky dough forms.
  • Pour the sprinkles in a shallow, small plate. Roll the dough into 1-tbsp-sized balls, then roll the top and sides in sprinkles. Place the balls on the cookie sheet sprinkle side up. The dough can be a bit messy at first, but it gets easier. Repeat this process until you have used all of the dough.
  • Bake until the top feels set and the cookies are rising, approximately 12-13 minutes. Let the cookies cool on the pan.
  • DEVOUR.
