You probably love CURRY if you like dishes that are full of flavor, spices and depth. Curry is a favorite in my home. We love it all, from the vegan coconut curry lentils soup to the funky curry sweet potato almond-butter dip. You know that I love curry, so I am bringing you another recipe today. It's an easy cauliflower chickpea curry! This warming, flavor-packed dish is filling, healthy, and satisfying. It's made with whole foods and spices you can pronounce, and that taste great when combined. This is the perfect weeknight meal and it makes the best leftovers!

Ingredients Required

  • Red Pepper
  • Drained, small diced tomatoes
  • Full Fat Coconut Milk
  • Yellow Curry Paste
  • Tapioca Starch
  • Reduced Sodium Soya Sauce
  • Coconut Sugar
  • Chickpeas, rinsed and drained
  • Cauliflower
  • Fresh Lime Juice
  • Sea Salt
  • Cilantro
  • Green Onion
  • Cooked Cauliflower or White Rice

Cauliflower Chickpea Curry

Sautee

In your Instant Pot, heat the oil on saute mode. Add the peppers and cook for a few minutes. Add the curry paste, tomatoes, and coconut milk. Stir until all ingredients are dissolved. Bring the mixture to a boil.

Stir

Stir the coconut sugar and soy sauce into the instant-pot along with the tapioca in a small bowl. It's now time to add the chickpeas, cauliflower and coconut sugar.

Cook

Once the cooking time is over, place the lid back on the Instant Pot and cook it on high manual pressure. Add some lime juice to taste.

Add some green onions and cilantro to your curry and EAT!

Serving Suggestions

This curry is bursting with flavor so I suggest serving it over rice, lentils or quinoa. They all have mild flavors, and they are perfect for soaking up the curry goodness. How to store leftover curry or a double batch of leftovers? In an airtight container, this curry can be stored in the refrigerator for up to 3 days. It's the perfect meal or lunch for busy days. For up to three months, you can store it in the freezer using a ziploc bag that is designed for freezing or an airtight freezer container. Label it with the date!

Ingredients

  • 1 Tbsp Coconut oil
  • 1/2 Large red pepper, roughly chopped
  • 1 15oz Can Petite diced tomatoes, very well drained *
  • 1 cup full-fat coconut cream (not light!) )
  • 1 Tbsp Yellow curry paste **
  • 2 tsp Tapioca starch
  • 1 Tbsp Reduced-sodium soy sauce (gluten free if needed)
  • 1/2 Tbsp Coconut sugar
  • 1 Chickpeas Rinsed and drained (not sodium-reduced).
  • 2 Cups Cauliflower, cut into large florets
  • Fresh lime juice squeezed
  • A pinch of sea salt
  • Cilantro, for garnish
  • Green onion, for garnish
  • White rice or cauliflower rice to serve

Instructions

  • In your Instant Pot, heat the coconut oil to "saute". Add the pepper to the hot oil and cook it for 2 minutes.
  • Stir until the curry paste dissolves. Add the tomatoes that have been drained, the coconut milk, and the curry paste. Bring to a rolling boil, and then boil for two minutes while stirring constantly.
  • Whisk the tapioca with 4 tsp hot liquid from Instant Pot in a small bowl until smooth. Whirl it into the Instant Pot, with the coconut sugar and Soy sauce, while constantly stirring. Boil the mixture for about a minute until it begins to thicken.
  • Add the chickpeas, cauliflower and water. Cover the Instant Pot, making sure that it is set to sealing! Set it manually to High Pressure, and cook for five minutes. Let the pressure naturally release.
  • After the pressure is released, squeeze fresh lime juice into the container and add salt to taste.
  • Serve with green onions and cilantro as a garnish.

Notes

You need to squeeze as much moisture out of the tomatoes as possible. Open the can, and squeeze the tomatoes to extract as much liquid as possible. The curry will not be as creamy and thick if you do not.
I haven't tried it with curry powder. You could certainly use it, but I can't say how much. You would also need to add this when sautéing the red pepper, if you tried it.
