You probably think of carrots as savory only when you dip them in ranch.
If you ask me, carrots would be better used in a gluten-free carrot cake or a paleo carrot cake made with almond flour.
WRONG. These savory carrots are so good that they might rival my love of oven-roasted maple bacon Brussels sprouts. Mix them with pomegranate seeds. SO GOOD.

Cumin is one spice that I keep on hand at all times in my kitchen. Cumin is often used in Mexican, African and Indian cuisines, among others. It can add some zing to any dish. I like the Cumin Healthy Chicken stir-fry with Carrot Noodles or Easy Moroccan Chicken recipe. It's also great for its health benefits!

Cumin Roasted Carrots Ingredients
Please add cumin to vegetables, roast them and serve to me! Adding delicious flavors to vegetables with spices such as cumin makes them more enjoyable! These Indian carrots are my absolute favorite and make an AMAZING side dish to serve at family gatherings during the holidays! You will be hooked by the warmth of the Indian spice and sweetness of the carrots! You will need the following ingredients to make this recipe:
- Small carrots peeled, sliced
- Coriander Seeds
- Cumin Seeds
- Coconut Oil
- Garlic Cloves, diced
- Salt and Pepper
- Cilantro
How to roast carrots
Roasting vegetables is my favorite method of cooking them. There are many ways to roast and season them for the best flavor! It's easy to roast carrots, like these cumin-flavored carrots! Here's how:
Preheat
Set your oven at 400 degrees Fahrenheit. Let it heat up fully.
Toast
Add the cumin and coriander seeds to a small saucepan on medium heat. (Do not add any cooking oil). They should be lightly toasted (about one minute) but you must keep stirring them as they will burn very quickly. Set aside the crushed toasted seeds.
Combination
Add the crushed seeds, coconut oil and garlic to a large bowl. Mix well until carrots are coated evenly.
Spread out the carrots on a large baking tray, leaving space between each one. Sprinkle with salt and pepper, and bake them. You will need to bake them for 30-40 minutes, and you'll want to turn them every 10-15 minutes.

What to serve with Cumin roasted carrots
You can eat these carrots as a healthy snack or as a delicious side dish to a meal. Combine them with a salad and a protein for a tasty dinner. I recommend:

Ingredients
- 16 Peel and slice small carrots 1/2 inch thick (1 1/4 lbs or approximately 6 cups)
- 2 tsps Coriander seeds
- 2 Tsps Cumin Seeds
- 1 Tbsp Coconut Oil melted
- 1 1/2 Tbsp Garlic diced
- Salt and Pepper
- Cilantro to garnish
Instructions

Pre-heat your oven to 400 degrees Fahrenheit.

Stirring constantly, heat a small saucepan on medium/high (do NOT spray with oil or cooking spray) and toast the cumin and coriander seeds until they are aromatic and lightly golden, about one minute.

Set aside the crushed seeds. *

Combine the carrots, coconut oil melted and garlic in a large bowl. Add the crushed seeds, and stir until carrots are well coated.

Spread the carrots in a single layer on a large baking sheet, leaving space between each carrot stick. Sprinkle with salt and black pepper.

Stir every 15-20 minutes. Bake for 30-40 minutes until golden brown.
