Are you a fan of garlic bread like I am? You're going LOVE this Easy Garlic Butter Baked Cod Recipe. To top these mild and tender cod fillets, I used the buttery garlic spread I use to top my garlic bread. The final result is a super easy weeknight main that I can prepare at a moments notice. I also added some lemon juice for brightness.
Cod's mild and slightly rich taste is the ideal base for zesty garlic and creamy butter. As if Garlic Butter Baked Cod weren't perfect enough, it is also incredibly easy and fast to make. Weeknight dinner perfection!
What is in Garlic Butter Baked Fish?
This recipe is a variation of my Garlic Bread, but I changed the recipe slightly to make it fish-friendly. What you will need to make the easy baked cod recipe:
- Cod Frozen Cod is the most cost-effective option. It also defrosts quickly, so you can prepare this meal without much planning! Choose fillets of about 4oz. each.
- Butter This butter is what delivers all the garlicky goodness! The butter's richness pairs beautifully with the flaky texture and lightness of the cod.
- Olive oil: A small amount of olive oil makes the butter mixture easier to spread and helps slow down the browning process.
- Fresh Garlic - the star of show! Fresh garlic gives the fish a big, punchy flavor.
- Paprika & Salt : Just a little seasoning will do, as we are looking for a light, fresh and simple flavor. Paprika can also add color to a pale palette.
- Fresh parsley: The addition of fresh parsley to the dish will add color and some freshness, which are always welcomed. However, it is not a necessity if you do not have any. You can substitute one teaspoon of dried Parsley for the fresh.
How to Thaw Frozen Cod
It is convenient to buy frozen cod, and you will usually pay less than if you bought it fresh. Frozen cod comes in bags with individual vacuum-sealed portions, making thawing a breeze. How to thaw frozen fish:
- Place the vacuum-sealed salmon in a bowl with cold water. If your fish has not been vacuum-sealed, place it into a zip-top bag and squeeze out as much air as you can.
- The fish should be left in cold water for 10 to 15 minutes or until it has thawed. The time required will vary depending on the thickness and size of the fillet. Transfer the thawed fillets to the fridge until you are ready to use them.
How to know when cod is done baking
The length of time it takes to bake cod depends on its thickness and the type baking dish that you are using. Cod should be baked for a minimum of 45 minutes, or until the internal temperature reaches 145oF. The flesh will become opaque at this temperature and flake easily when pierced with a fork. The cod will become rubbery or tough if you continue to bake it beyond this point.
The filets I had were thicker than usual and I was using a ceramic dish that took a bit longer to heat up. I therefore baked them at 400oF for 20 minutes to achieve an internal temperature of about 145oF. You may only need 15 minutes if you are baking thin filets in a metal dish or if your fish is very thin. It is very helpful to use an electronic meat thermometer that can be read instantly.

- 4 Tbsp butter (room temperature) $0.50
- 2 Tbsp olive oil $0.32
- 4 cloves garlic, minced $0.32
- 1/4 tsp paprika $0.02
- 1/4 tsp salt $0.02
- 2 Tbsp finely chopped parsley $0.22
- 1 lb. cod (4 4 oz. filets) $5.99
- 1 fresh lemon $0.69
Instructions

Pre-heat the oven to 400oF. Combine the butter, parsley, garlic, olive oil and paprika in a small bowl. Stir until it becomes a smooth paste.

Place the cod filets in a baking dish. Add the garlic butter mixture to the fish and spread until it is evenly coated.

Slice the remaining half lemon and place the slices on the top of the fish. Slice the remaining half lemon into wedges to serve.

Bake the cod in the oven for 15-20 minutes or until the fish flakes easily with a knife and the temperature inside reaches 145oF. (The total baking time depends on the thickness and material of your baking dish). Pour any juices that may have accumulated at the bottom of your pan on top of the fish. Serve the cod with the rest of the fresh lemon wedges to squeeze juice on top.

Easy Baked Cod: Step-by-Step Photos
Pre-heat the oven to 400oF. Combine 4 Tbsp butter at room temperature, 2 Tbsp oil, 4 garlic cloves minced, 1/4 tsp. paprika and 1/4 tsp. salt in a small bowl. Add about 2 Tbsp. of finely chopped parsley. Mix all ingredients until smooth. A few small butter lumps are fine.
Spread the garlic butter over the cod fillets.
Slice the half of the lemon, and then add it to the baking dish. Slice the remaining lemon into wedges and serve it with the fish.
Bake the Garlic Butter Cod in the oven for 15-20 minutes or until it flakes easily with a knife and reaches 145oF. The fish will cook quicker if you use a thin metal dish or thin filets. The fish will take a little longer to bake if you use a thick glass baking dish, ceramic baking dish, or thicker filets. Pour any juices from the pan on the fish to spread the lemony taste.
Serve with the lemon slices and squeeze a few fresh lemon wedges over the top.

Are you a master of making curry paste?
Curry paste can be made with dried chillies. It's a common ingredient in Thai cuisine.
One of the most widely used condiments in Southeast Asia is curry paste. It gives many dishes a unique taste, including curries, soups stir-fries, stir-fries and salads.
It's easy to make at-home! Follow our step-bystep guide below.
Step1 - Prepare Ingredients
- Before starting the recipe, you will need to prepare all ingredients.
- First, peel and chop shallots (2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
- Next, peel and slice garlic cloves (about four cloves). Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
- Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
- Next, slice the kaffir lime leaves in thin strips of about 5 inches. Remove the white part of the stem and set it aside.
- Once the shrimp paste has been drained, rinse it and then coarsely crush it.
- Finally, measure out sugar and salt.
Step2 - Grind Ingredients
- Mix all ingredients until well combined.
- The texture should be comparable to peanut butter.
- Take note: If you are looking to reduce oil in your dish you can add water to the mix.
Step3 - Add Coconut Milk
- Add coconut milk to the mixture, and mix well.
- Add coconut milk slowly so that the paste does not become too sticky.
- If you like it milder, reduce the number of chillies used and add more galangal root.
- You may prefer it hotter, so add more chilies or less galangalroot. The end result should be delicious.
Step4 -- Serve
- Top it with your favorite foods.
- Enjoy!
