We're off to Korea today for another culinary adventure. This is not just any random recipe (that wouldn't justify a trip to Korea at all, would it?) We're going to make one of my favorite summer dishes - Korean Cucumber Salad.
This salad is made with crispy cucumbers, spring onion slivers, honey, and Korean red pepper flakes for a fiery kick. What a flavor explosion!
Do you like the spicy Kachumbari from East Africa? Maybe you prefer the zingy Thai cucumber salad? You'll already know that I love cucumber salads. (I also enjoy other Korean delights, like my Bibimbap!) This Korean salad is similar to those you love, but has its own charm. It's time to make salads!
Is Korean Cucumber Salad Healthy?
This is a cucumber salad, so it's good for you. The ingredients are simple and fresh. Cucumbers? Cucumbers are a great way to hydrate and they also contain vitamins. The spicy sauce is a great way to boost your metabolism. The lime juice adds vitamin C, and the honey is a natural sweetener. Soy sauce is salty but not as bad as table salt.
