Well, I've got just the thing for that craving: This seriously tasty (and healthy-as-all-get-out!) Lentil Soup. This soup is loaded with the best ingredients: earthy brown beans, diced tomatoes that are as fresh as a daisy, and a variety of vegetables. It's healthy, comforting food with a ton of flavor.

Lentil Soup has the unique ability to be both delicious and healthy. The soup is bursting with fiber-rich lentils and fresh vegetables that are packed with vitamins. It's also cooked in olive oil which is a healthy fat which reduces inflammation and improves your skin and hair. Spices are not just for flavor; they also help lower blood pressure and cholesterol.
Ingredients

- 1 carrot, diced
- 1/2 onion, diced
- Extra virgin olive oil, 1 tbsp
- 2 cloves garlic, minced
- 1 tsp cumin ground
- 1/2 tbsp curry powder

- 4 cups vegetable broth

- Before cooking, I recommend that you rinse and sort the lentils . It is important to check for any small stones or other unwanted materials that may have crept in.
- Before adding liquids, I always sauté the vegetables. It enhances the taste of the soup. Don't rush this step. It is important.
- Do not add the spinach to soon. Add it just before serving. This will keep its color and flavor fresh. It takes only a few minutes for the spinach to wilt.
- Taste the soup before serving . Add more salt or pepper if you feel it is needed, but only in small quantities.
- If you like a soup with more chunks, decrease the cooking time a little to keep the lentils' texture. It's nice to have a larger bite, especially when you are making a soup like this.

What happens when you switch from conventional products to organic?
