  • 3 whole beetroots
  • 2 cups lettuce
  • 4 oz. goat cheese
  • 1/4 cup toasted almonds
  • 2 oz. Balsamic Vinaigrette
  • 2 tbsp olive oil
  • Salt and pepper

The oven should be heated to 350degF. Place the beets whole on the foil. Wrap them in foil and coat them with salt, pepper, olive oil. Bake the beets for 30 minutes, or until they are soft.

Peel and cut the beets into thick wheels after they have cooled.

Add the washed lettuce to a bowl and drizzle on the balsamic dressing. Spread the microgreens, beetroots, goat cheese and almonds over. Sprinkle salt and pepper.

You can also add some fruit. Fruits like sliced pears or apples, dried cranberries or berries, or orange segments will complement the cheese.

  1. Wholesale clubs - Sams Club and Costco are great places for bulk food like chicken breasts or pork chops. You can often find deals on large quantities (up to 50 pounds) if you live close to one of these stores. This will ensure that you don't waste any meat. You can also freeze the meat if you buy it bulk.
  2. Shop around online - Tons of websites sell meat at discounted prices. Amazon has Prime Pantry, a weekly sale that offers free shipping for orders over $35. They offer discounts for beef roasts and ground beef as well as lamb steaks, lamb steaks, pork loins, and other items. It's easy to browse their website and see what's available at different times.
