These Dairy Free Vegan Carrot Muffins have a super moist texture and are fluffy. They are so healthy, gluten-free and egg-free that you will not believe it!

As soon as Easter is on the horizon I start to get crazy with my carrot cake recipes.

There is no carrot cake recipe that I haven't tried.

Do not worry, however. These carrot muffins aren't the same as the sugar-free gluten-free oatmeal carrot muffins. The spiciness is not a trick to fool your taste buds.

These healthy gluten-free carrot cake muffins will only be "fast" if they disappear so quickly. They are fluffy, spicy sweet and have a subtle ginger sensation which is going to make your taste buds almost fall off of your face.

Are Carrot Muffins Healthy?

Muffins have always been my go-to. Muffins are my go-to when I'm on the run and need to grab and go for breakfast, or if I want a quick afternoon snack. It's a bonus when muffins that I make are healthy and nutritious for me, such as Healthy Quinoa and Oat Bran Muffins.

You can make carrot muffins healthier than regular muffins. We've lightened up THESE vegan carrotcake muffins with healthy alternatives.

Vegan Carrot Muffins Ingredients

It's the best to eat healthy food and feel good about it. These muffins will knock your socks of. You will need the following ingredients to make them:

  • Pecans
  • Oat Flour
  • Cinnamon
  • Ground Ginger
  • Ground Nutmeg
  • salt
  • Water
  • Melted Coconut Oil
  • Baking powder
  • Coconut Sugar
  • Crushed Pineapple, drained
  • Vanilla
  • Grated Carrot

Healthy Swaps

It's not the first time I've repeated it. It's not necessary to make unhealthy muffins. They can be delicious, fluffy and taste like cake. I've changed a few ingredients in traditional muffins to make these carrot-oat muffins healthier.

  • Instead of all-purpose flour, the recipe calls for oat flour. It's a great taste and consistency. And it's also gluten-free!
  • Butter: Many recipes call for butter or margarine. I chose coconut oil instead. The muffins are now dairy-free, vegan, and healthier!
  • Sugar White: Instead of white sugar, I used coconut syrup. It still has the same sweetness but is healthier!

How To Make Carrot Muffins

Let's bake!

Preheat

Preheat your oven to 350 degrees Fahrenheit. Coat a muffin pan generously with cooking spray.

Toast

Spread out the pecans onto a baking tray and bake them until they begin to smell "nuts", which will take approximately 5 minutes. Chop them roughly, and put aside.

Whisk

In a small mixing bowl, combine the flour with the cinnamon, ginger and nutmeg. In a large bowl, combine the coconut oil, water and baking powder. Whisk until it bubbles. Then, add the pineapple, coconut sugar and vanilla and whisk to combine.

Mix well the dry ingredients with the wet. Add the pecans and carrots lastly and combine well. Cover and chill the mixture for 30 minutes.

Fill

Fill the muffin pan evenly with batter once it has been chilled. Sprinkle more pecans if desired.

Bake the muffins at 375 degrees for 5 minutes. Then lower the temperature and bake them an additional 11-15 more minutes.

Devour

Allow to cool completely in pan before enjoying.

  • 6 tablespoons Pecans plus additional for topping, if desired
  • 2 cups Oat Flour (208g)
  • 1 tablespoon Cinnamon
  • 1 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • 1/2 teaspoon Salt
  • 8 tablespoons Water
  • 4 tablespoons Coconut Oil melted
  • 8 teaspoons Baking Powder
  • 1 cup Coconut Sugar
  • 1 cup Crushed Pineapple drained
  • 2 teaspoons Pure Vanilla Extract
  • 1 cup Carrot grated

Instructions

  • Pre-heat your oven to 400degF. Spray a muffin pan with cooking spray.
  • Spread out the pecans onto a small baking tray and toast them until they are dark and smell "nutmegy", about 5 minutes. Set aside. Roughly chop the pecans.
  • In a large bowl, combine the cinnamon, ginger and nutmeg.
  • In a large, separate bowl, whisk together the coconut oil, water and baking powder. Add the coconut sugar, vanilla, and pineapple. Whisk until combined.
  • Mix the flour and the liquid ingredients together. Stir in the pecans and carrots.
  • Cover and refrigerate 30 minutes.
  • Fill 10 muffin tins with the mixture. Fill them almost to the top. Sprinkle more pecans, if desired.
  • After 5 minutes at 400degF, lower the temperature to 325degF and bake for 11-15 more minutes or until the toothpick is clean.
  • Allow to cool COMPLETELY IN THE PAN.
  • DEVOUR.
