It's delicious, easy to make, filling and you can cook it in less than 30 minutes. Like I'm-not-going-to-stop-eating-this-until-it's-all-done delicious. What about pillowy gnocchi, drenched with a buttery cream sauce and topped with juicy chicken and earthy green spinach? Ummm, yeah. This one is a winner!
What is Gnocchi?
Gnocchi is a small, two-inch gnocchi made from mashed potatoes, eggs, and flour. The dumplings are usually served with a cream sauce, butter, tomato or tomato-based sauce. This dish pairs gnocchi and diced chicken thighs with a creamy butter sauce. This is a meat-and-potatoes dish with some spinach added because Beth said we should cook more vegetables.
What you'll need
This dish is easy to make and doesn't require a lot of time. This silky, dreamy dish is made in just 30 minutes in a single skillet! What you will need to make Creamy Chicken and Gnocchi is:
- Gnocchi You can buy them frozen or freshly, but I like the dried ones because they're more affordable and I have more space in my pantry. They are usually found in the pasta section at your local grocery store.
- Chicken Thighs - You can use the chicken breast as well, but don't overcook, you want juicy, flavorful chicken and not cotton-balls. If you're in a hurry, substitute the thighs for Italian sausage. Skip the seasoning.
- Heavy Cream and Butter - This is a creamy sauce so is heavy on dairy. The fat in these ingredients is what creates the velvety sauce. You can replace the heavy cream with coconut cream full-fat and the vegan butter with the heavy cream
- Parmesan - adds saltiness and thickens the sauce. Asioago and feta are great substitutes. You can use nutritional yeast if you don't want to eat dairy. However, your sauce will become much more liquid.
- Vegetable Broth is used to hydrate dried gnocchi. It also helps create our cream sauce. You can substitute it with chicken stock or, in a pinch with water and a tablespoon of tomato paste.
- Garlic and Onion- These aromatics are fried into the chicken thigh grease and flavor the gnocchi. You can replace the onion with 1 tablespoon of onion powder, and the garlic powder with 1/4 teaspoon.
- Spinach - adds earthiness to the dish and gives it a beautiful colour. You can replace spinach with kale. It will soften a bit slower.
- Italian seasoning creates a simple flavor base. If you do not have Italian seasoning on hand, try substituting it with 1 teaspoon dried oregano and 1 teaspoon dried thyme.
- Smoked-paprika -- using this spice to add a dank and smoky flavor helps balance the sharpness of Italian seasoning. The sauce also gets a golden color from the paprika.
What to serve with Creamy Chicken Gnocchi
It is heavy so serve it with a Simple Side Salad, or Panzanella. Garlic Bread is a great way to soak up the sauce. It is amazing with garlic bread. Garlic counts as a veggie!
Storing and Reheating
This dish is made with cream, so I do not recommend freezing it. The cream will become grainy as it defrosts. Refrigerate leftovers for up to three days in an airtight container. Reheat until steaming in the microwave.

Instructions

Cut the chicken thighs in 2-inch cubes. Add the shredded chicken to a large bowl, then top with Italian seasonings, smoked paprika and salt and pepper. Mix until combined.

Add the cooking oil to a large deep skillet and place it over medium heat. When the oil is shimmering, add your chicken, and cook it without stirring for about 3 minutes. Stir the chicken and brown it on the second side for about 3 minutes. When the chicken is cooked through, remove it from the pan and leave the fat.

Add the garlic and onion to the pan. Sauté the onion and garlic until they are fragrant. This should take about 2 minutes.

Heat the gnocchi in a skillet with butter and cook for 2 minutes.

How to make Creamy Chicken and Gnocchi with Step-by-Step Photos
