You might wonder, what makes this salad different? This salad is devoid of greens. No filler here, just the killer. It's made with mozzarella di bufala, which is a kind of local celebrity in Italy. It is similar to the mozzarella I use in my Oven Baked Mozzarella Sticks recipe or the BEST Frittata recipe, but has its own Italian flair. What is a caprese? Sometimes, simplicity and ease bring out the best flavors. It's a reminder that, in truth, too much can be too much.
Is a Classic Caprese Salad healthy?
Yes, you bet! This recipe is full of natural, fresh ingredients that are good for your health. Those juicy tomatoes? The tomatoes are packed with vitamin A and C. What about the mozzarella? Step1 - Prepare Ingredients
- Before you start making this recipe, prepare all ingredients.
- First, peel and chop shallots (2 cups). Next, chop galangal root into small pieces (3 inches in length) and place aside.
- Next, you will need to peel and slice the garlic cloves (about 4 cloves). Next, peel and mince the lemongrass stems (about 1/2-inch thick).
- Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
- Cut the kaffirlime leaves into small strips, approximately 5 inches in length. The white part of your stem should be removed and put aside.
- After draining the shrimp paste, wash it well and then coarsely smash it.
- Final, weigh out salt and sugar.
Step2 - Grind Ingredients
- Blend all ingredients together until smooth.
- The texture should look similar to peanut-butter.
- You can replace some oil with water if you wish to reduce the oil content of your dish.
Step3 - Add Coconut Milk
- Mix the coconut milk into the mixture.
- To prevent the coconut milk from becoming too sticky, slowly add it.
- For a milder taste, use less chillies and more galangal roots.
- You can make it more spicy by adding more chilies and less galangal root. The final product should be tasty to you.
Step4 -- Serve
