What is cashew butter?

We can talk about cashew cream if we shake a rabbit tail twice. You know what that is. You know what I'm talking about. You can make it easily, but only if you own one of those high-powered blenders. Use it.

It is possible to use a food processor. Just be prepared to buzz away for an eternity in order to achieve this smooth and delicious result.

You're paying a small amount for an eternity which is actually 10 minutes long and that ends in you crashing into a cookie the size of your head.

Ingredients

Pizza:

  • 1/4 cup coconut oil, melted
  • Coconut sugar, 1 cup
  • 1 large egg, white
  • 1/2 tsp pure vanilla extract
  • 1 1/2 cups of almond meal, 5 ounces
  • 1 3/4 tsp Baking Powder
  • Half a teaspoon of salt
  • Add additional chocolate chips for topping (optional).

Frosting:

  • 1 cup of raw, unsalted, un-salted cashews (approximately 75 grams) that have been soaked for 8 hours in water
  • 3 tbsp vanilla almond milk unsweetened
  • 1 1/2 tbsp honey
  • 1/2 teaspoon pure vanilla extract
  • Pinch of sea salt
  • 2 tsp coconut oil, melted

Instrucciones

For the pizza cookie dough:

  1. In a large mixing bowl, mix the coconut sugar and melted coconut oil.
  2. Beat the egg whites and vanilla extract until they are well blended.
  3. Pour almond meal, baking soda, and salt in the oil mixture, and stir until well combined. Transfer the frosting to a large bowl and cover it with a lid. Then, chill until the frosting is thick.
  4. Mix in the chocolate chips.
  5. Wrap the bowl in plastic and place it in the refrigerator for an hour.

For the Frosting

  1. While the dough is chilling, drain and blend the cashews in a small food processer (mine has 3 cups).
  2. Blend the honey, almond milk, vanilla, and sea salt with until smooth. Add the coconut oil melted as you blend.

  • Blending the nuts may take several minutes, depending on how powerful your food processor is. Stopping to scrape the sides is necessary.
  • Add the chocolate chips and let it sit an hour.
  • The darker the chocolate the healthier it will be. It's all about finding the sweet spot. Any cocoa that is over 70% is good for you.

Almond meal can be made by finely grinding the almonds to resemble flour. It's a great source of healthy fats and protein, and it can be substituted for wheat flour in baking. You can buy almond meal or make it yourself if you have a food processer (and raw unsalted nuts).

Is there an alternative to cashews that is nut-free?

Ingredients

For the pizza:

  • 1/4 cup Coconut Oil Melted
  • 1 cup Coconut Sugar
  • 1 large Egg White
  • 1/2 teaspoon Pure Vanilla Extract
  • 1 1/2 cups Almond Meal 5.4 ounces
  • 1 3/4 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Dark Chocolate Chips Plus additional for topping (optional)

Frosting:

  • 1/2 a cup raw, unsalted cashews about 75 grams that have been soaked for at least eight hours
  • 3 tablespoons Unsweetened Vanilla Almond Milk
  • 1 1/2 tablespoons Honey
  • 1/2 teaspoon Pure Vanilla Extract
  • pinch of Sea Salt
  • 2 teaspoons Coconut Oil Melted

Instructions

Pizza Cookie Dough

  • Beat together the coconut sugar and melted coconut oils in a large bowl.
  • Beat the egg whites and vanilla extract until well combined.
  • Pour the almond meal and baking powder into the oil mixture, and stir well until combined.
  • Add the chocolate chips.
  • Cover the bowl with saran and place in the refrigerator for an hour.

Frosting:

  • While the dough is chilling, drain the cashews. Place them in a small food processer (mine has 3 cups).
  • Blend the coconut oil, almond milk, vanilla, and honey until smooth. This could take several minutes, depending on how strong your food processor is. You may need to scrape the sides of the bowl as needed. Transfer the frosting to a bowl and cover it. Refrigerate to allow the frosting to thicken.

To Serve:

  • After the dough has cooled, pre-heat your oven to 350degF. Line a baking tray with parchment paper.
  • The dough should form a 8-inch circle when pressed onto the pan.
  • Bake for 19-20 minutes, or until the edges are a deep golden color and the interior is still soft.
  • Allow the pan to cool completely.
  • Spread the cashew-cream frosting on top. Sprinkle with extra chocolate chips.

Notes

Cashews can be soaked by placing them in a large bowl, and covering it with water. Cover the bowl with water and place it in the refrigerator for 8 hours or more to soften cashews.
It's much easier to make the cream smooth if you use a high-powder blender.
Spreading the frosting on right before serving will soften it slightly. You can also do this a bit ahead of time and then refrigerate it to keep the cookie firm.
