Chilaquiles is a delicious and hearty Mexican breakfast that will knock you off your feet! These bad boys, which are easy to make and affordable, are made from crispy tortilla chips that have been soaked in a delicious red enchilada-flavored sauce. They're served with a variety of toppings. The traditional toppings of a Chilaquiles are cheese, avocado, cilantro, sourcream, and eggs. However, you can use any leftover meats or vegetables from your fridge. Budget-friendly! This recipe was adapted from Muy BuenoFiestas, Yvette's new cookbook.

What are Chilaquiles?

The Nahuatl term "chilliaquilitl" means "chili-soaked". The tortilla chips in this recipe are lightly soaked with a chili sauce. Traditionally, the fried tortillas would be cooked in the salsa, which softens them. However, Yvette likes her chips to remain crunchy, so she drizzles on the sauce. Top chilaquiles however you like! As I was testing this recipe, I used a small amount of leftover rotisserie (the part at the back that no one wants to eat) to top my Chilaquiles. Delicious!

What you need to make Chilaquiles

Chilaquiles are versatile because you can add whatever toppings you like and make them lighter or heartier. Yvette's recipe is pretty traditional. You'll need these ingredients to make Chilaquiles:

  • Tortilla Chips -- You'll want thick tortilla chips, which can resist getting soaked with a sauce and not getting soggy. It's easy to fry your own tortilla chips, and it is also cost-effective. If you can find thicker, restaurant-style chips, then you can speed up the process.
  • Cooking Oil-You can use any oil with a neutral flavor to fry tortilla chips. You can use corn oil, vegetable or canola oils.
  • Enchilada Sauce You can find it in the Latin section at most supermarkets. Yvette has a wonderful recipe that I have included in the notes of the recipe below.
  • Choose your topping_ For this recipe we topped chilaquiles using sliced green onion, fresh cilantro, diced Avocado, shredded Oaxaca Cheese, and crumbled Queso Fresco. If you cannot find Oaxaca, then use a pre-shredded Mexican blend of cheeses. Mexican crema can also be substituted with sourcream. To keep the recipe budget-friendly we skipped the eggs. However, if you want to make this a heartier morning meal, add fried eggs.

Tips for Making Chilaquiles

Chilaquiles can be delicious and versatile. But there are some tricks to get them right.

  1. Be sure to fry the tortillas only in hot oil. Otherwise, they will end up soggy. Add a small tortilla piece to the hot oil. When the oil is at the correct temperature, it should bubble and sizzle before turning golden after about 40-50 seconds.
  2. Drain the freshly fried chips onto a large plate or sheet pan lined with paper towels. The paper towel will absorb the excess oil and keep your tortilla chips crisp. While the chips are still warm, salt them.
  3. To prevent the tortilla chips from becoming soggy, prepare your toppings prior to adding sauce.
  4. Make the tortilla chips ahead of time if you're serving a large group. Make the sauce in advance if you are making it from scratch. Serve toppings in small bowls instead of topping Chilaquiles. This allows guests to create their own perfect combination. You'll save a lot of time.

What to serve with Chilaquiles

You can serve chilaquiles with our Cheesy Pinto Beans, Guacamole, Cowboy Caviar or Tomato Rice. Serve Chilaquiles along with our Cheesy Pinto Beans or Tomato rice. Don't forget that they are amazing with Fried Eggs.

  • 1/4 cup cooking oil $0.16
  • 8 white corn tortillas or yellow corn tortillas (8 inches) $0.07
  • 1/4 tsp salt $0.02
  • 1 10oz. Can red enchilada Sauce* $2.49
  • 1/4 cup crumbled queso fresco $0.50
  • 1/2 cup shredded Oaxaca cheese $0.80
  • 1/4 cup fresh cilantro leaves $0.11
  • 1/3 cup sliced green onions $0.35
  • 1 avocado, diced $0.99
  • 2 Tbsp Mexican crema $0.25

Instructions

  • Line a large sheet pan with paper towel. Cut 8 corn tortillas into quarters.
  • Heat the cooking oil in a large pan over medium heat until it shimmers. Fry two layers of quarters at atime, turning them as necessary, until they are lightly browned, and slightly crunchy. This should take about one minute per side. To drain, transfer the tortilla quarters onto the plate lined with paper towels. Repeat the process with the remaining quarters.
  • Heat the red enchilada* sauce in a large pan.
  • Divide tortilla chips between two large plates. Divide the warm salsa equally and drizzle it over each tortilla chip on the plate.
  • Sprinkle the Mexican crema, chopped green onions, cilantro leaves, crumbled cheese from Oaxaca, and sliced green onion on each plate. Enjoy the delicious contrasts in flavors, textures and temperatures as soon as possible!

Notes

Red Chile Sauce recipe by Yvette Marquez Shapnack
Ingredients
Red chiles from California or New Mexico, 1/4 lb.
3 cups of water
3 Tablespoons of all-purpose flour
2 cloves of garlic, roughly chopped
Salt 1 1/2 teaspoons
Olive oil for cooking
Directions
Remove the seeds and veins of the chiles. Place them in a colander, and then rinse under running cool water.
Combine the chiles and water in a large saucepan. Bring to a rolling boil. Reduce the heat, cover and simmer for 10 min.
Continue to simmer for about 10 more minutes, turning the chiles with tongs to ensure they soften evenly. Recover and re-cover. Drain the water and allow to cool down for several minutes.
Combine the cooled chiles with water, flour and garlic in a blender and puree it until smooth. To remove the seeds and skins, pass the sauce through fine-mesh strainer set over a large bowl. The solids will be thrown away in the sieve. Store in an airtight container in the fridge for up 1 week, or the freezer for 6 months.

Chilaquiles: Step by step photos

Line a large sheet pan with paper towel. Cut 8 corn tortillas into quarters.

Warm 1/4 cup of cooking oil in a large, deep skillet over medium-high heat until it shimmers. Add two layers (8 quarters each) of tortillas and fry. Turning as necessary, fry until lightly browned, and slightly crunchy. About 1 minute per side. Transfer the tortillas quarters onto the plate lined with paper towels to drain. Sprinkle with a pinch salt. Repeat the process with the remaining quarters of tortilla.

Warm up the 10 ounces enchilada in a large pan. You can find Yvette’s recipe for enchilada in the notes section on the recipe card.

Divide tortilla chips between two large plates. Divide the warm enchilada salsa equally and drizzle it over each tortilla chip on the plate.

Divide the remaining ingredients: 1/2 cup Oaxaca shredded cheese, 1/4 cups crumbled Queso Fresco, 1/4 Cup fresh cilantro leaves (or green onions), 1/3 cup green onion, 1 diced Avocado, and 2 tablespoons Mexican crema. Divide the mixture between two plates.

That's it! It's easy, I told you. Enjoy the delicious contrasts in flavors, temperatures, and textures immediately. Woot! Another one. (In my best DJ Khaled voice)

5 Reasons to buy organic products
