In my nearly 30 years of life, I've learned that only a handful of things are 100% true. Always:
- Peanut butter cheesecake bars can solve all your problems
- There's always a 5 o'clock somewhere. (Read: any time IS a good moment for a margarita.)
- The cheese can also heal all wounds and broken hearts.
They may be cousins
Finally, I'll share something that I just learned recently: Cauliflower, the "Superman" of vegetables.
Or woman. I'm a cauliflower equal-opportunity-ist.
You can cook cauliflower in 4 different ways. But you can also make cauliflower mashed potatos with only 5 ingredients, or cauliflower potato salad, or even cauliflower tabbouleh.
Now... a delicious, cheesy baked! Nothing is not to love.
Cauliflower Bake Ingredients
I don't usually like side dishes. When it comes to weeknight dinners, I prefer to cook one dish because I don't need to prepare multiple dishes. One pot rice with pumpkin, or one pot jambalaya - keeping it simple is my jam! When a dish is delicious, healthy and easy, I just can't resist. This bacon-topped loaded cauliflower casserole has it all! This savory, mouth-watering side dish is easy to prepare.
- Cauliflower Heads
- Hickory Smoked bacon
- Onion
- Garlic
- Goat Cheese
- Cream Cheese
- Salt and Pepper
- Green Onion
How To Make A Baked Cauliflower
Prepare
Turn on the stove and let it heat up. Spray a small casserole with cooking spray.
Microwave
Place the entire cauliflower in a large bowl that can be microwaved. Microwave on high for 8 minutes. Heat on high for eight minutes. Remove the cauliflower, stir, and then heat it again for eight minutes.
Cook the Bacon
Heat a small saucepan on medium-high heat while the cauliflower is cooking. The bacon should be cooked for 2-3 minutes on each side or until golden brown. After it is cooked, remove the excess fat using a paper towel. Chop it up. Set aside. Reserve the bacon grease.
Sautee
Add the garlic and onions to the bacon grease and heat it up a little. Sauté them until just done - they should be golden brown and soft.
Process
Blend the cauliflower cooked with some goat cheese in a food processor.
Add the bacon to the cauliflower mixture in a large mixing bowl. Mix gently to combine.
Add the mixture to the casserole dish. Top with the goat cheese. Bake until top is golden brown. Enjoy!
Serving Suggestions
This oven-baked casserole dish can be eaten as a complete meal. You can make it into a full meal by adding some balsamic-grilled vegetables and asparagus-stuffed chicken breasts.
Cauliflower bake with goat cheese
Ingredients
- 2 large head Cauliflowers chopped (8 cups chopped)
- 4 strips Hickory Smoked Bacon
- 1 cup Onion diced
- 4 teaspoons Garlic minced
- 10 ounces Goat Cheese divided
- 1/4 cup Reduced Fat Cream Cheese softened
- To taste Salt and Pepper
- Green Onion sliced, for garnish
Instructions

Heat the oven to 400degF, and spray a small dish with cooking spray.

Place the cauliflower in a large microwave-safe bowl. Microwave for 8 minutes. Stir, and microwave an additional 8 to 10 minutes until the cauliflower is fork-tender.

While the cauliflower is cooking, heat up a small skillet on medium heat. Cook the bacon for about 2-3 minutes each side. After cooking, remove excess fat using a paper towel and cut the bacon into small pieces. Set aside. Reserve the bacon fat from the pan.

On medium/high heat, cook the onions and garlic until they are golden brown and soft. This should only take 2-3 minutes.

Add the cauliflower cooked in a food processor with 8 oz goat cheese, cream cheese and cooked onions. Process until almost completely smooth and well combined, but keep a few pieces for texture.

Add the bacon slices to the mixture and mix well. Salt and pepper to taste.

Add the remaining goat's cheese to the casserole dish and top with the cauliflower.

Bake for 20 minutes or until the top is just beginning to brown. Serve garnished with green onions.

Here's how to store your cooking spices for maximum performance. First, we must understand how food is stored.
Spices are stored in airtight containers away from the light because exposure to light diminishes their flavour. This is caused by oxidation, which happens when oxygen and organic compounds combine like spices.
To avoid oxidation, spice should be kept in dark cupboards. Spice tends to lose its flavour quickly if these conditions aren't met.
You can preserve the flavor of spices by keeping them in sealed jars, away from direct sunlight.
For a flavoured beverage, add herbs and spices. Mix 2 teaspoons ground cinnamon with 1/2 cup of warm liquid and stir. Add a squeeze of lemon juice and serve immediately.
