I love it when my fork shovels ALL the food into my mouth, including whatever is baked (hi crunchy, crispy MEGA delicious sweet potatoes skin! It gives me warm, fuzzy feelings in my stomach.

How to cook sweet potatoes

Sweet potatoes are one of my FAVORITE ingredients.
You can use them in so many different meals. Try my Creamy Healthy Carbonara and Creamy Healthy Vegan sweet potato soup in the slow cooker. You can use them to make a sweet potato pie bar or a gluten free version. What do you think? It's SO versatile! Sweet potatoes can be cooked and enjoyed in many different ways, such as THIS Stuffed Sweet Potato Recipe. Here are some ways to prepare them:

  • Sweet potatoes in the Crockpot are simple to prepare and provide perfectly tender sweet potatoes every time. SINGLE. TIME. This method is great because it's easy to use and you can't mess up!
  • Baked - Put them in the oven to roast them, either whole or in bite size chunks.
  • Boiled: Cook them, then mash and make a sweet potato casserole.
  • Microwaved - If you are short on time and want your sweet potatoes to be cooked quickly, just pop them into the microwave. They'll become soft and fork tender in no time!

Let's move on to the recipe for today. The stuffed baked potatoes combine rich, sweet, tangy and savory flavors for a flavor explosion that you'll love. Gather the ingredients to get the party going:

  • Sweet Potatoes
  • Heads Of Garlic

  • Taco Seasoning
  • Fresh Cilantro
  • Salt and Pepper
  • Eggs
  • Fresh Avocado
  • Fresh Lime Juice
  • Lime Zest
  • Water

How To Make Mexican Stuffed Sweet Potatoes

You're probably getting hungry now that you've seen our delicious ingredients. Let's start this recipe!
Preheat
Set the oven at 400 degrees Fahrenheit and place the potatoes onto a baking sheet lined with tin foil.
Prepare the Garlic
Then, drizzle some olive oil on the cloves that are exposed, and rub it in. Wrap the cloves of garlic in two layers of tinfoil to create a packet and place them on a baking sheet.

Remove the packet from the pan and allow the sweet potatoes to cook another 30-40 minutes or until they are fork tender. The sweet potatoes will need to be cooked for another 30-40 mins or until they can be easily pierced. Remove the packet and let the sweet potatoes cook in the pan. Allow the potatoes to cool for about 10 minutes and then reduce the temperature of the oven to 375 degrees.
How to prepare the sweet potato
Peel the skin off the sweet potatoes by gently slicing them lengthways. Keep the skins intact on the sides. Scoop out the flesh from each half. Place it in a small bowl. Keep a small amount of flesh on the skin so that they keep their shape.

Mash
In a bowl, mash the sweet potato flesh. Remove half the flesh and place it in a container. Refrigerate (we will not be using this, so feel free use it for another meal!) Add the taco seasoning and cilantro to the remaining sweet potatoes in the bowl. Season with salt and pepper. Squeeze out all the soft garlic and combine.
Fill
Put the filling evenly into the skins of the sweet potatoes. You should have no problem with this since you have already removed the flesh of the sweet potatoes! )
Crack the Egg
Sprinkle salt and pepper on them, then bake until they are done. Sprinkle with salt and pepper, and bake them to your preference. It usually takes 12-15 minutes to cook an egg with a yolk that is still runny. However, I suggest watching closely to ensure they don't overcook.
Blend
While the potatoes bake, place the avocados, lime zest and juice in a food processor. Blend until smooth. While the processor is still running, slowly add the water.
Enjoy
Remove the eggs from the oven once they are cooked. Let them cool down a little and then place them on a plate to be served. Divide the avocado sauce on each potato and garnish with diced tomato and additional cilantro.

You don't have to worry if this recipe makes you drool, but you follow a vegan-friendly diet! You can make these a vegan meal by simply leaving out the egg!

Ingredients

For the Potatoes

  • 4 medium Sweet Potatoes
  • 2 heads Garlic
  • 2 teaspoons Extra Virgin Olive Oil
  • 1/2 tablespoon Taco Seasoning
  • 1/4 cup Fresh Cilantro plus additional for garnish
  • Salt and Pepper
  • 4 Eggs

For the sauce :

  • 1/2 cup Avocado about 1 medium avocado
  • 1 tablespoon Fresh Lime Juice
  • 1 teaspoon Lime Zest
  • Salt and Pepper
  • 2 tablespoons Water

Instructions

  • Pre-heat your oven to 400degF. Line a baking tray with tinfoil and place the potatoes on top.
  • Then, drizzle olive oil over the cloves and rub it in gently. Wrap the garlic in tinfoil, using two layers. Place it on the pan.
  • Bake the garlic for about 45 minutes. Continue cooking the potatoes in the same pan for another 30-40 mins.
  • After the potatoes have softened, leave them to cool for about 10 minutes. Reduce the temperature of your oven to 375 degrees.
  • The skin of the potato should be left intact. Slice the potatoes in the middle and peel the skin back gently. Scoop out the flesh and place it in a large bowl. Leave a small amount of potato on the side to keep the shape.
  • Remove half the sweet potato flesh from the bowl. (You won't use this flesh so you can use it at a future date!) Add the taco seasoning and cilantro to the mashed sweet potato flesh. Season with salt and pepper. Squeeze in the remaining soft garlic from the roasted head. * Combine well.
  • Spread the flesh out gently to fill each sweet potato, leaving a large center hole. (This should be simple, since you only used half the original amount).
  • Sprinkle salt and pepper on each sweet potato and place it back on the baking sheet. Crack an egg in each hole. Bake until you get the desired level of doneness. The runny egg yolk usually takes 12-15 minutes, but you should watch closely to avoid overcooking the eggs.
  • While the sweet potatoes are cooking, add the avocado mashed, the lime juice, and the lime zest to a small processor (3 cups is mine) and blend it until smooth. While the food processor is running, slowly stream the water into the machine until it is well mixed. Salt and pepper to taste.
  • Divide the avocado sauce among the potatoes and spread it on top.
  • Add additional cilantro, diced tomatoes, and a garnish of diced tomato.

Notes

Two heads of garlic were perfect for me. Add 1 head, taste it and decide if you need more.

Almond Flour and Almond Meal: What is the Difference?

A almond meal is a versatile almond flour alternative that can be used to bake, cook, or even make nut-free dishes.

Almond flour can also be gluten-containing, which can make it difficult to digest. Gluten-free foods should be avoided if you have celiac Disease or any other digestive condition.

Although almond flour isn’t considered to be a “superfood”, it is rich in healthy fats and fibre.

The nutritional benefits of the almond meal include magnesium, copper, iron, zinc, manganese, phosphorus, potassium, calcium, and vitamins A, B1 (thiamin), and C. In addition, it provides 25 percent of the daily value for folate, 20 percent for niacin, 15 percent for pantothenic acid, and 5 percent for riboflavin.

Almond flour, made from almonds contains monounsaturated and polyunsaturated oil. Both types lower LDL (bad cholesterol) and increase HDL(good cholesterol).
