You may only have eaten cod fried in the air. You may have only eaten cod fried, and didn't know you could grill it.
I definitely belonged to that group.
Then I made cod eggs scrambled and had a lot of leftover cod. I was forced to find a way to use the rest. You're now in the head of a food blog. We just make up stuff based on leftovers.
My brain asked, "Can you grill cod fillets?"
You can do it, internet friends.
Foil Packet Code
Cod cooked in foil packets SEALS in moisture, leaving you with a JUICY flaky fish. This might be your new favorite method of cooking it. In the winter I can imagine you wearing 4 sweaters and Ugg boots. (Do people still wear these?) You're going to be preparing some of the best grilled cod recipes.
This might be stretching it. But, it might not. Stranger things have happened.
How to Grill Cod
- Pre-heat your grill on medium heat.
- Sprinkle your seasonings over the cod after it has been dried with a paper towel. Allow the cod to stand at room temperature for 30 minutes so that you can get all of that flavor!
- Place two pieces of tinfoil atop each other to make a tinfoil pouch. Place the cod in center of the packet and seal it tightly.
- Grill the fish until it is opaque, flaky and reaches 145 F. Rest it for 5 minutes.
Let's talk about FLAVOR.
Cod isn't the spiciest of fishes, so you need to add some spice.
What better way to achieve this than with CAJUN seasoning. It was a rare moment when I agreed with Mr. FFF that Cajun seasoning would be a good idea.
Let me tell you that CAJUN grilled Cod is the best. It's smoky, spicy and delicious. The slaw has a tangy, creamy taste and the sweetness of the peppers counteracts the Cajun heat.
This recipe is also a little more CAJUN, because you cannot call a Cajun recipe without the holy trinity: bell peppers (or other hot peppers), onions and celery.
What should I serve alongside grilled cod
Serve this cod with some lemon potatoes roasted in the oven!
When you pierce the cod with a fork, it should be nice and flaky.
This recipe is perfect for any white fish, like sole, tilapia or halibut.
You can leave the onion out of the slaw to make it a bit more FODMAP-friendly. It was just as delicious when I made this for Mr. FFF, who can't eat onions.
Cajun seasoning: How to use it
This recipe uses a Cajun seasoning mix that I made myself. You could also use store-bought, as I did for the honey Cajun Salmon. You don't want to add too much salt before you cook the cod, in case it is more salty than mine.
Your taste buds are ready for a CAJUN INVASION.
Cajun Grilled Cod Recipe
Ingredients
- 1 pound Fresh Atlantic Cod (4 fillets)
- 2 1/2 teaspoons Cajun Seasoning
- pinch of Salt
- 4 teaspoons Olive Oil
The Slaw
- 2 tablespoons Mayonnaise (Paleo-friendly if needed)
- 2 teaspoons Apple Cider Vinegar
- 1 teaspoon Dijon Mustard
- 1/8 teaspoon Sea Salt
- 1 tablespoon Fresh Chopped Parsley packed
- Green Bell Pepper Very thinly sliced
- Red Bell Pepper Very thinly sliced
- 1 Celery Heart rib very finely sliced
- 1/8 large onion thinly sliced
Instructions

Pre-heat your grill to medium.

Then, pat the cod with a paper towel. Sprinkle the Cajun seasoning with sea salt, and allow to stand for 30 minutes.

Place two pieces of tinfoil atop each other and place one cod in each. Close the packets tightly and drizzle each fillet of cod with one tsp olive oil.

Fold the packets up and place them on the grill. Grill until the fish is flaky and opaque, 5-10 minutes, depending on size and thickness. After cooking, allow the fish to cool and rest for five minutes.

Mix all ingredients for the slaw, including the parsley, in a large mixing bowl while the fish is cooling. Stir in the parsley.

Stir the vegetables until well coated.

SERVE the slaw on top of the cod, and EAT!
