This time of year I live on cold pasta salads, so I made this super simple and delicious Bruschetta Pasta. It is a fresh, summer pasta that was inspired from the flavors and ingredients of Bruschetta. This pasta salad is a delicious side dish to accompany dinner. You can also grill some chicken marinated in garlic and serve it on top to make it a complete meal.

What's inside Bruschetta Pasta?

This fresh and summery pasta is inspired by Bruschetta. It features tomatoes marinated with a homemade balsamic dressing, fresh basil and pasta. That's IT. This is so easy, so delicious, and fresh! Fresh tomatoes and basil are essential to this pasta, so if you grow your own or know someone who does, then make it!

What kind of pasta to use

This recipe would work with any short pasta shape. Bowtie and campanelle are also great. In a pinch longer pasta like spaghetti will work, but I recommend breaking it in half so that the tomato pieces can mix with the pasta and not clump together on the outside.

What to serve with Bruschetta Pasta

You can serve this pasta as a simple side dish with any grilled fish or meat, or add additional ingredients to make it into a complete meal. This pasta would go well with cubed mozzarella or fresh cheese pearls. You could also serve some sliced garlic-marinated chicken on top. This would be great with seafood, such as garlic butter shrimps or Garlic Butter Baked cod. Don't forget to add a simple salad as a side dish.

  • 1/3 cup olive oil $1.10
  • 3 Tbsp balsamic vinegar $0.45
  • 1/2 Tbsp Dijon mustard $0.09
  • 2 cloves garlic, minced $0.16
  • 1/2 tsp salt $0.03
  • 1/2 tsp freshly cracked pepper $0.03
  • 4 Roma tomatoes $1.80
  • 12 oz. penne pasta $0.94
  • 1/2 cup fresh basil, loosely packed $0.67

Instructions

  • First, make the vinaigrette. Add the olive, balsamic, Dijon, mustard, garlic, and salt to a bowl. Whisk until smooth.
  • The tomatoes should be finely diced. Pour the dressing on top of the tomatoes in a large bowl. Mix the dressing and tomatoes together, then leave them to marinate.
  • The penne pasta should be cooked according to the instructions on the package (boil for 7-8 minutes or until it is tender). Drain well in a colander. Let the pasta cool.
  • While the pasta cools, chop roughly the basil.
  • Add the pasta, drained and cooled, and the chopped basil. Give it another stir. Stir everything until it is coated with the dressing and evenly mixed. If needed, add additional salt or pepper to the pasta. Serve immediately or chill until ready to consume.

How to make Bruschetta Pasta – Step by step photos

The flavors will blend better if you make the vinaigrette before adding the other ingredients. Combine 1/3 cup of olive oil with 3 tablespoons balsamic, 1/2 tablespoon Dijon mustard and 2 minced garlic cloves. Add 1/2 tsp each of salt and freshly cracked pepper. The ingredients should be whisked together until smooth. Set the dressing aside.

Four Roma tomatoes or two large tomatos can be finely diced.

Pour the vinaigrette on top of the tomatoes, and then mix them all together. While you prepare 12 oz. of pasta, let the tomatoes marinate. Follow the directions on the pasta package. Drain pasta and let it cool.

As the pasta cools, roughly chop 1/2 cup of fresh basil (loosely packed or 1/2 oz. Fresh basil, weighed.

Add the basil and pasta to the bowl after the pasta has been drained.

Mix everything until it is evenly coated with the dressing. Taste the pasta and adjust salt or pepper according to your taste. You can eat it immediately or keep in the fridge for 1-2 days.

What is the difference between cooking with whole spices and using ground spices? Ground Spices?

There are no significant differences in the cooking of whole and ground spices. All spices are ground after harvesting. It doesn't make a difference in terms of quality.

However, this price differential is quite significant. Whole spices can be more expensive due to the labor involved in their processing. But the flavour is worth it.

Buy whole spices and you'll often receive additional discounts. You might get a discount if your entire bag is of cinnamon sticks.

Do You Know How To Make Curry Paste?

Curry paste can be made with dried chillies. It is an important ingredient in Thai cuisine.

Curry paste is one of the most popular condiments in Southeast Asia. It gives many dishes a unique taste, including curries, soups stir-fries, stir-fries and salads.

It's easy to make at-home! Follow our step-bystep guide below.

Step1 - Prepare Ingredients

  • Before starting the recipe, you will need to prepare all ingredients.
  • Begin by peeling and cutting shallots into small pieces (about 2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
  • Next, slice four garlic cloves. Lemongrass stems about 1/2 inch thick should be removed and finely chopped.
  • Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
  • Cut the kaffirlime leaves into small strips, approximately 5 inches in length. The white part of your stem should be removed and put aside.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Finally, measure out sugar and salt.

Step2 - Grind Ingredients

  • Blend all ingredients together until smooth.
  • The texture should be comparable to peanut butter.
  • You can replace some oil with water if you wish to reduce the oil content of your dish.

Step3 - Add Coconut Milk

  • Mix in coconut milk and stir well.
  • Add coconut milk slowly so that the paste does not become too sticky.
  • If you like it milder, reduce the number of chillies used and add more galangal root.
  • If you like it spicier, add more chillies and less galangal root. You should enjoy the final product.

Step4 – Serve

  • Top it with your favorite foods.
