A crowd favorite! Warm tortillas are topped with bacon, potatoes, scrambled egg, and other toppings.

The perfect combination of crispy bacon, potatoes browned to perfection, and scrambled egg with cheese, all wrapped up in a warm, tortilla. This is a great breakfast, lunch or dinner. It comes together quickly and you can use one pan for all the ingredients.

You can cook the potatoes in the bacon fat, which is my favorite part. If you prefer to be meatless, however, you may use vegetable oil and skip the bacon.

After your potatoes are cooked, scramble your eggs until you reach the desired consistency. You can cook it to your own taste (and for longer or shorter).

Wrap the bad boys and add a bit of pico, cilantro, and cheese. Breakfast will never look the same again.

Ingredients

  • 6 slices bacon
  • 1 russet potatoes peeled, and cut into half-inch cubes
  • To taste Kosher Salt and freshly ground Black Pepper
  • 2 tablespoons unsalted butter
  • 6 large eggs lightly beaten
  • half cup Mexican blend cheese

Serving

  • Tortillas warmed
  • Pico de gallo
  • Shredded Mexican Blend Cheese
  • Fresh cilantro leaves chopped

Instructions

  • Heal a large cast-iron skillet on medium heat. Cook bacon until crispy and brown, approximately 6-8 minutes. Transfer the bacon to a plate lined with paper towels, leaving any excess fat in your skillet.
  • Add the potatoes to the pan and cook them, stirring frequently, for 12-14 minutes, or until they are golden brown and crispy. Season with salt and black pepper to taste. Transfer the potatoes to a plate lined with paper towels; keep warm.
  • Reduce heat to medium. Butter in skillet, add eggs and cook with occasional stirring until just beginning to set. Add cheese and cook until no liquid egg is visible, approximately 3-5 minutes. Season with salt and pepper to taste.
  • Place bacon, potatoes, and eggs on tortillas. Top with your favorite toppings.

How To

Do You Know How to Make Curry Paste?

Curry paste uses dried chillies, shallots, galangal root, lemongrass, kaffir lime leaf, garlic, shrimp paste, sugar, salt, and sometimes coconut milk. It is used extensively in Thai cuisine.

Curry paste is a very popular condiment in Southeast Asia. This unique flavor can be added to many dishes including curries, soups and stir-fries as well as rice dishes, noodles, desserts, and rice dishes.

It's very simple to make this at home. Follow our step-bystep guide below.

Step1 - Prepare Ingredients

  • Before you can start the recipe, it is important to have all the ingredients ready.
  • Start by peeling and chopping shallots (about 2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
  • Next, you will need to peel and slice the garlic cloves (about 4 cloves). The lemongrass stems should be roughly 1/2 inch thick.
  • Crush the red chilli peppers with about four tablespoons of water and remove the seeds.
  • Next, trim the kaffir lime leaves into strips about 5 inches in length. Remove the white part of the stem and set it aside.
  • Once the shrimp paste has been drained, rinse it and then coarsely crush it.
  • Finally, measure out sugar and salt.

Step2 - Grind Ingredients

  • Grind all ingredients together until smooth.
  • The texture should be similar to that of peanut butter.
  • Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.

Step3 - Add Coconut Milk

  • Mix coconut milk with the mixture.
  • You should slowly add the coconut milk so that it doesn't get too sticky.
  • If you prefer less spicy, add fewer chillies and more galangal root.
  • If you prefer it spicy, add more chillies or less galangal roots. The final result should taste delicious to you.

Step4 -- Serve

  • Serve on top of your favourite foods.
  • Enjoy!
