The classic mojito is my go-to drink, even though the season of patios brings many tropical & fruity adult beverages.
The dish is sophisticated but easy. What about the lime and mint? It's so FRESH, I should give it a slap.
I try to recreate lazy summer days all year round by making a mojito salad or smoothie OR having it for breakfast.
The flavors don't seem to work when I am inside, wearing a parka and 88.6 blankets.
Even the imagination I have is not that good.

Raspberry Mojito Recipe
Ingredients
- 3/4 cup Fresh Blueberries
- 4 ounces White Rum 4 shot glasses full
- 2 ounces Water
- 2 cups Frozen Raspberries
- 6 cups Ice Cubes
- 1/4 cup Fresh Mint
- 2-3 tablespoons Truvia To taste, plus more for rimming
Instructions

Put the blueberries into a medium-sized bowl and lightly mash with a muddler. Some blueberries can be left chunky to give the dish a different texture. Set aside.

Blend all ingredients until smooth and icy. The drink will be thick so you might need to stop the blender every now and then to scrape down its sides.

Optional rimming - Pour some lemon into a shallow, medium-sized bowl, and some Truvia into a shallow, small plate. Pour the Truvia into a small shallow plate and then the lemon juice on the rims of the cups. Twist each cup in Truvia to coat the rim. Repeat with the remaining glasses.

Pour or spoon the mojito in the cups, and then top it with the blueberries that have been muddled.
