Arroz Con Salchichas or Puerto Rican Rice and Sausage is one of my favourite pantry meals. It's easy to prepare, comforting and full of flavor. Beth says to put an egg over it, then eat till you hate yourself. This last part was all mine. PS You can make it in less than an hour and for under $1 per serving!

This is not an authentic historical recipe. We create recipes to be accessible to all, so ingredients must be readily available in a budget-friendly grocery store. We test the recipes with the fewest steps, ingredients, and tools while honoring the spirit. I was raised in Puerto Rico, and I look forward to the day when our ingredients will be available in supermarkets. Buen provecho until then!
What is Arroz con Salchichas?
In many Latin American cultures, rice with sausage is a comforting food. It's a traditional weeknight dish in Puerto Rico made with Vienna sausages canned and cooked in a delicious sofrito. Yellow rice is topped with capers and briny olives. Corn is sometimes added.
Arroz con Salchichas Ingredients
Arroz con Salchichas, my recipe is a pretty traditional one. To keep the recipe budget-friendly, I skip the corn and salt pork which are present in many rice dishes on my island. If you want to include them, you can fry a quarter cup of salt pork diced before adding the sofrito, and then add 1 1/2 cups frozen, fresh or drained can corn after you add the olives. What you need to make Arroz Con Salchichas.
- Sofrito is a powerful Puerto Rican blend that provides the base flavor for many of our savory recipes. Fresh sofrito will always taste better than canned. See my easy recipe for basic Puerto Rican Sofrito.
- Adobo - These spice blends add earthy notes and a golden color to the rice. If you cannot find adobo or sazon where you live, I have included some basic recipes on the recipe card.
- Tomato Sauce - adds acidity and colour to the dish.
- Garlic, Cilantro, and Onion add earthy notes. You can substitute the onion powder with 1 tablespoon and the garlic powder with 1/4 teaspoon. If you do not have cilantro, use fresh Italian parsley instead or skip it.
- Vienna Sausage - These small, open-ended sausages have a texture similar to hot dogs but are smaller. They add a meaty flavor to the rice. You can substitute them with any hot dog or sausage.
- Rice is traditionally used in Puerto Rico. Budget Bytes uses long-grain Jasmine Rice. You can use any rice you like, but make sure to follow the instructions on the package for cooking time and liquid amounts.
- Capers and Olives - This mixture is called Alcaparrado, and it delivers a burst of acidic brininess with every bite! If you do not have capers or olives, simply add two tablespoons distilled white vinegar in their place.
Arroz Con Salchichas Variations
Arroz con Salchichas can be easily customized. You can use wild rice or brown rice. Follow the instructions on the package for cooking time and adjust liquid. You can add corn or any other vegetables you have to make it more filling. Although it is not traditional, sometimes I add carrots, peas or diced tomato. If you can't find Vienna sausages, try:
- Hot Dogs
- Chorizo
- Kielbasa
- Spam
- Chicken Sausage
Arroz con Salchichas: What to serve with it
Arroz con Salchichas is a great accompaniment to Ensalada de Aguacate, Yuca En Escabeche or the beans from this Puerto Rican rice and beans recipe. This dish is also delicious with Fried Eggs.
How to Store Leftovers
Arroz Con Salchichas can be refrigerated in an airtight container up to five days. You can also freeze the rice in portions and store it in a freezer safe container for up 6 months. Reheat the rice in a microwave until it is steaming.

- 1/4 cup diced yellow onion $0.19
- 1 Tbsp minced garlic $0.24

- 2 5oz. cans Vienna sausages $1.50
- 2 cups long-grain white rice $0.74
- 2 1/2 cups chicken broth, boiling $1.12
- 1 tsp salt $0.04
- 1/4 cup chopped cilantro leaves for garnish $0.11
Instructions

Add the cooking oil into a large, heavy-bottomed pan set on medium heat. Add the adobo, sazon, and cook for 30 seconds until fragrant. Add the yellow onion dices and cook for about 2 minutes until translucent. Add the minced cloves of garlic and cook for 30 seconds.

Add the capers, olives and green sauce to the pot and stir until aromatic, about 2 minutes. Meanwhile, cut the Vienna sausages in 1/2 inch-thick circles and rinse the risotto until it runs clear. Drain off any excess water.

Sauté the Vienna sausages until they are browned. Add the rinsed, salted rice and the boiling chicken broth. Stir the pot and bring it to a boil. Large bubbles will appear on the surface. Stir again, reduce the heat and cover the pot.

Cook the rice on low heat for 15 minutes or until it is tender. Cover the pot but remove it from the heat. Cover the pot and let it rest for 10 minutes. Remove the cover, stir the grains, taste and adjust seasonings to your liking. Stir in the cilantro leaves, then prepare to devour a large bowl of rice.

Arroz con Salchichas: Step by step photos
Add 1 tablespoon cooking oil to a heavy-bottomed large pot over medium heat. Add 1 tablespoon of adobo, 1 packet of sazon, and cook for 30 seconds until fragrant. Add 1/4 cup diced yellow onions and cook for about 2 minutes until translucent. Add 1 tablespoon minced garlic to the pan and continue cooking until fragrant (about 30 seconds).
Add the 2 tablespoons tomato sauce, 2 tablespoons green olives and 2 teaspoons capers to the pot and cook for 2 minutes until fragrant. Add corn and other vegetables to the pot if you plan on adding them.
Sauté until brown. Add two 5-ounce Vienna sausages, drained and cut into slices. Add 2 cups of cooked rice, 1 teaspoon salt and 2 1/2 cups boiling chicken broth. Stir the rice and bring it to a boil. Large bubbles will appear on the surface. Stir again, reduce the heat and cover the pot.
Cook the rice on low heat for 15 minutes or until it is tender. Cover the pot but remove it from the heat. Cover it and let it rest for 10 minutes. Remove the cover, stir the rice and taste it. Adjust the seasoning if necessary. Add 1/4 cup cilantro leaves.
Serve yourself a large bowl of it! Like I did, you can add avocado slices. You can also do this to prepare for a full belly. I undo the top button on my jeans. In Puerto Rico we say "Buen provecho!"

What's the Difference Between Cooking With Whole vs. Ground Spices?
There are no significant differences in the cooking of whole and ground spices. All spices are ground after harvesting. So there is no difference in quality.
However, the price difference is substantial. Whole spices can be more expensive due to the labor involved in their processing. But the flavour is well worth it.
If you purchase whole spices in bulk, you might get an additional discount. For example, you might receive a discount if you buy an entire bag of cinnamon sticks.
This is true for cloves, ginger and cardamom. These spices can be purchased in bulk to save money.
Ground spices are also more durable than whole spices. Because ground spices lose potency quickly from oxidation, this is why whole spices last longer than ground spices.
We recommend buying whole spices because they add flavor to your recipes.
You can make delicious curry using whole turmeric, instead of ground turmeric. You can also use whole coriander to create a spice combination for chicken dishes.
The process of grinding spices takes a lot of time. It is sensible to purchase large quantities when buying whole spices. So you don't run short of spices.
