Experience Exquisite Flavors With Herb Vinegars and Vinegars!

Fancy schmancy flavored vinegars and oils are a great way to add flavor to food and make an impressive homemade gift. These herbal infusions are easy to make, and you can use whatever herbs or vinegars you have on hand.

Homemade herb-infused vinegars can be a great way to preserve herbs from your garden and they look beautiful in decorative bottles on kitchen and bathroom shelves. The best part is they are a safe and quick preserve to make.

Infusing Oils

Depending on the herb, oil infusions can be used as salad dressing, hair rinse or massage oil. They also make great gifts for any occasion.

Herbal infused oils are shelf stable and will keep for 2 to 3 weeks in the fridge after straining. They can also be used as a base to create herbal bath salts and herbal body butters.

Oils can be infused with herbs (as long as they are acidified) using the double boiler method, or by placing a smaller saucepan inside of a larger one filled about 1/3 to 1/2 with water and heated to boiling.

A fine-mesh colander or a reusable nut milk bag and cheesecloth are helpful tools for straining the infused oil. The oil can then be poured into decorative glass bottles and used as gifts. This method is quicker and works best during the warm months of summer when fresh herbs are abundant. Some recipes require the use of citric acid, which can be found at most grocery stores in the vinegar section.

Sturdier herbs, like rosemary, give a nice aromatic flavor with just one or two big sprigs. Use these infused vinegars in salad dressings, shrub cocktails and oxymels! They also make great gifts. Each infused vinegar recipe with foraged ingredients will have its own unique flavor profile, reflecting the plants that were available to you at that moment in time!

Making Herbal Oil Infusions

Infused oils make great massage oils, for a simple facial moisturizer or to soften rough skin on hands and feet. They also work well as a base for herbal balms, creams and soaps.

Dry herbs (not fresh) are the best for this type of oil. Choose those that are not irritants to the skin and have a pleasant smell. Some good choices are yarrow (Achillea millefolium), elder flower (Sambucus nigricans) or daisies (Bellis perennis).

Place the dried herb(s) in a clean glass jar and fill with the vegetable oil of your choice. Seal the jar and set it in a warm sunny spot for a week or so, shaking the jar every 1-3 days to help the herbal properties penetrate the oil. Once the oil is infused, follow the instructions for straining and bottling. The infused oil will keep for a year or more if kept in a cool dark place and if the oil is stored sealed.

Making Herbal Vinegar

If you've cruised the farmers market stalls in summer, you have probably seen herbal vinegar and wondered, "How do they get that flavor?" Well, it's not hard at all to create gourmet condiments bursting with herb flavor. You only need a handful of herbs, a few clean, sterilized bottles and a little time to make your own herb-flavored vinegar.

You can use the cold or hot infusion process to create a herb infused vinegar. Finished herbal vinegars can be stored in the refrigerator (although some require an acidification process to preserve them).

To start your infusion, clean and lightly bruise a handful of carefully washed and towel-dried herbs and pack them into a jar. Add a pinch of salt and then pour room-temperature vinegar over the herbs. Seal the jar and set it in a cool dark place for three to four weeks. Strain the vinegar and bottle it, adding a fresh sprig or two of your chosen herb for decoration, if desired.
