Although there are many recipes that call for Thai spices in large numbers, very few recipes actually use the true thing. Let's discuss how to incorporate these tasty flavors into your meals.
As far back as ancient times, Thais have been cooking with herbs and spices to add flavor to food and beverages. Thai, which means "to make", comes from the Sanskrit word.
Most Thais like spicy food, even today. This preference can be attributed to Thailand’s hot weather. It is difficult to stay warm when you don't have something to drink. Thais also consume more chili peppers that Americans or Europeans.
The best way to learn about Thai spices is to visit a local Asian grocery store. There will be a large selection of ingredients available including dried chilies (fresh basil leaves), curry paste, ground black pepper, and curry paste.
You may also come across whole peppercorns, cloves, cinnamon sticks, star anise, cardamom pods, ginger root, turmeric powder, cumin seeds, coriander seeds, fennel seeds, nutmeg, mace, mustard seed, saffron threads, garlic, onion, rice vinegar and tamarind juice.
Thai cuisine can use either dry or wet spices. Dry spices are generally ground, while wet spices can be crushed or pounded finely.
Dry spices are added directly to a dish. Ground red pepper can be sprinkled on chicken soup, for example. Mixing wet spices with oil or butter can create a paste.
Wet spices can be used in sauces, dressings, and marinades. The most popular wet spices are fish sauce (oyster sauce), sesame oil, sesame paste, curry paste, and Hoisin sauce.
Thai recipes can be prepared at home by knowing which spices pair well with what ingredients.
For example, red pepper flakes is recommended for beef. If you use seafood like shrimp, you should use white pepper instead.

Cinnamon adds sweetness, while black pepper brings out savoury flavours. Coriander seeds add a spicy kick, while turmeric gives curry powder its signature yellow colour. Cayenne peppers add heat, while cilantro brings out the freshness. A final ingredient is cinnamon, which adds depth and complexity.
Each of these spices can be found at your local grocery, but you may prefer to buy them online.
Does Thai use ginger?
The answer is yes. Traditional Thai cooking makes extensive use of ginger. It is commonly added to stir-fries or soups. Ginger is also used in desserts such as lassis.
Ginger is a native of China, Japan, Korea and other Asian countries. Its origins go back over 5,000 years. It is believed to have originated in Southeast Asia, where it was cultivated for medicinal purposes.
Ginger has been known to improve digestion and reduce nausea. It may even help prevent migraines. Ginger is also known to reduce muscle spasms and joint pains as well as treating arthritis.
Ginger is often fresh in Thailand. The ginger root is then cut into thin strips. Once dried, it can be stored for future use. Ginger root can be purchased in cans or jars at Asian markets.
What is the difference between cooking with whole spices and using ground spices? Ground Spices?
There are no significant differences in the cooking of whole and ground spices. All spices are ground after harvesting. It doesn't make a difference in terms of quality.
However, the price difference is substantial. Whole spices are more expensive due to the labour required for processing them. However, the flavor is worth it.
Buy whole spices and you'll often receive additional discounts. If you buy a whole bag of cinnamon sticks, you may get a discount.
The same applies to nutmeg and cloves, ginger or cardamom. You might be able to save money by buying these spices in bulk.
Ground spices don't last as long as whole spices. Ground spices lose their potency rapidly due to oxygenation.
The main reason we recommend whole spices over dried is that they can add lots of flavor to recipes.
You can make delicious curry using whole turmeric, instead of ground turmeric. For chicken dishes, whole coriander seeds can be ground to make a spice blend.
The process of grinding spices takes a lot of time. When you buy whole spices, it makes sense to buy a large quantity. So you don't run short of spices.

Are You able to make curry paste?
Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It's used extensively in Thai cuisine.
Curry paste is one of the most popular condiments in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.
It's not difficult to make at home! Follow the steps below to make it easy!
Step1 - Prepare Ingredients
- Before you can start the recipe, it is important to have all the ingredients ready.
- To begin, you will need to peel and chop shallots (about 2 cups). Next, cut galangal root into small chunks (about 3 inches) and put aside.
- Next, cut four garlic cloves into pieces. Next, peel and mince the lemongrass stems (about 1/2-inch thick).
- Then, crush dried red chilli peppers (about four tablespoons) and remove the seeds (optional).
- Next, trim the kaffir lime leaves into strips about 5 inches in length. Take out the white part and place it in a bowl.
- After that, wash and drain shrimp paste (about 6 ounces), then coarsely mash it.
- Last, take out the salt and sugar.
Step2 - Grind Ingredients
- Grind all ingredients together until smooth.
- The texture should be comparable to peanut butter.
- Take note: If you are looking to reduce oil in your dish you can add water to the mix.
Step3 - Add Coconut Milk
- Mix in coconut milk and stir well.
- Slowly add coconut water to prevent the paste from getting too sticky.
- You can reduce the amount of chillies and increase the quantity of galangal root if you prefer it less spicy.
- If you like it spicier, add more chillies and less galangal root. The final product should be tasty to you.
Step4 – Serve
- Serve with your favourite foods.
- Enjoy!
