How to store your spices?

They should be kept out of direct sunlight and heat in an airtight container.

To store spices for longer periods of time, place them in a dark cupboard. This will help keep them fresh and prevent any deterioration due to oxidation.

Keep spices away from direct sunlight in a dry, cool place. The spice may lose flavour and aroma if placed near a window or heater.

Spices are best stored in an airtight glass jar or tin. If storing in plastic containers, make sure there is no moisture inside the container.

After opening the seal, make sure to inspect it again. Humidity can cause spoilage.

You don't have to throw out leftover spices. Instead, use them up by adding them to other dishes. For an extended shelf life, you can freeze the vegetables.

Do you know how to make curry paste?

Curry paste contains dried chillies and shallots, galangal roots, lemongrass (kaffir lime leaf), garlic, shrimp paste, sugar and salt. It is an important ingredient in Thai cuisine.

Curry paste is one the most loved condiments in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.

It is easy to make your own at-home recipes! Follow our step by step guide below.

Step1 - Prepare Ingredients

  • Before starting the recipe, you will need to prepare all ingredients.
  • Peel and chop shallots (about two cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
  • Next, remove and cut the cloves of garlic (about four cloves). Peel and finely mince lemongrass stems (about 1/2 inch thick).
  • Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
  • Next, slice the kaffir lime leaves in thin strips of about 5 inches. Set aside the white portion of the stem.
  • Next, drain and wash the shrimp paste (6 ounces), and then coarsely mashing it.
  • Last, take out the salt and sugar.

Step2 - Grind Ingredients

  • Grind all ingredients together until smooth.
  • It should have a texture similar to peanut butter.
  • Not to worry if the dish contains too much oil, you can use water to replace it.

Step3 - Add Coconut Milk

  • Mix coconut milk with the mixture.
  • Slowly add coconut water to prevent the paste from getting too sticky.
  • If you prefer less spice, add less chillies to the recipe and more galangalroot.
  • For a more spicy taste, increase the amount of chillies and reduce the use of galangal root. The final result should taste delicious to you.

Step4 – Serve

  • Top your favorite foods with this topping.
