Thais are still fond of spicy foods. This preference is often due to the heat in Thailand which makes it difficult for people to stay warm without hot drinks. Thais also consume more chili peppers that Americans or Europeans.
A local Asian grocery store is the best place to learn more about Thai spice. You'll find many ingredients there, including fresh basil leaves, dried chilies and curry paste.
You may also come across whole peppercorns, cloves, cinnamon sticks, star anise, cardamom pods, ginger root, turmeric powder, cumin seeds, coriander seeds, fennel seeds, nutmeg, mace, mustard seed, saffron threads, garlic, onion, rice vinegar and tamarind juice.
Thai cuisine offers two types of spices: dry and moist. Most Thai cuisine uses dry spices, which are ground and pulverized finely.
Dry spices are often added to a dish directly. For example, you can sprinkle ground red pepper onto your chicken soup. Wet spices are commonly mixed with oil or butter to form a paste.
Wet spices can be used in sauces, dressings, and marinades. Common wet spices include oyster sauce, fish sauce and sesame oils, curry paste, hoisin sauce, and sesame seed oil.

What is the difference between cooking with whole spices and using ground spices? Ground Spices?
There is no difference in cooking with whole spices and cooked with ground spices. After harvesting, spices are ground. So there is no difference in quality.
The price difference is however significant. Whole spices are more expensive due to the labour required for processing them. But the flavour is worth it.
If you purchase whole spices in bulk, you might get an additional discount. A whole bag of cinnamon sticks might be eligible for a discount.
It is the same for cardamom and cloves as well as ginger, ginger, nutmeg, and ginger. You may be able save money if you buy these spices in bulk.
Ground spices don't last as long as whole spices. Ground spices lose their potency rapidly due to oxygenation.
But the main reason why we recommend purchasing whole spices is that they add a lot of character to recipes.
Whole turmeric can be used to make delicious curry. For chicken dishes, whole coriander seeds can be ground to make a spice blend.
It takes time to grind spices. It makes sense to purchase large quantities of whole spices when you are buying them. So you don't run short of spices.

Do You Know How To Make Curry Paste?
Curry paste contains dried chillies and shallots, galangal roots, lemongrass (kaffir lime leaf), garlic, shrimp paste, sugar and salt. It's a common ingredient in Thai cuisine.
Curry paste is one of the most popular condiments in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.
It is very easy to make it at home. Follow our step by step guide below.
Step1 - Prepare Ingredients
- Before you start making this recipe, prepare all ingredients.
- To begin, you will need to peel and chop shallots (about 2 cups). Then, cut the galangal roots into small pieces (approximately 3 inches in length), and then set aside.
- Next, cut four garlic cloves into pieces. Next, peel and mince the lemongrass stems (about 1/2-inch thick).
- Next, crush the dried red chilli peppers (4 tablespoons) and then remove the seeds (optional).
- Next, slice the kaffir lime leaves in thin strips of about 5 inches. The white part of your stem should be removed and put aside.
- Once the shrimp paste has been drained, rinse it and then coarsely crush it.
- Finally, measure the sugar and salt.
Step2 - Grind Ingredients
- Mix all ingredients until well combined.
- The texture should be comparable to peanut butter.
- Not to worry if the dish contains too much oil, you can use water to replace it.
Step3 - Add Coconut Milk
- Add coconut milk to the mixture, and mix well.
- Slowly add coconut water to prevent the paste from getting too sticky.
- If you prefer less spice, add less chillies to the recipe and more galangalroot.
- You may prefer it hotter, so add more chilies or less galangalroot. The final result should taste good to you.
Step4 - Serve
- Serve on top of your favourite foods.
- Enjoy!
