For authentic Thai cooking at home, you need to be familiar with five essential spices: cayenne, coriander, turmeric, cinnamon, and black pepper. Each ingredient has its own unique flavour profile, and each plays an important role in creating delicious dishes.
Black pepper enhances the savoury flavors of curry powder, while cinnamon gives it sweetness. Coriander seeds add a spicy kick, while turmeric gives curry powder its signature yellow colour. Cayenne peppers bring the heat while cilantro adds freshness. A final ingredient is cinnamon, which adds depth and complexity.

Do You Know How to Make Curry Paste?
Curry paste is made from dried chillies, shallots and galangal root. It also contains lemongrass, galangal root (lemongrass), lemongrass, kaffir Lim leaf, garlic, shrimp paste and sugar. It is used extensively in Thai cuisine.
One of the most widely used condiments in Southeast Asia is curry paste. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.
It's not difficult to make at home! Follow the steps below to make it easy!
Step1 - Prepare Ingredients
- Before you can start the recipe, it is important to have all the ingredients ready.
- Start by peeling and chopping shallots (about 2 cups). Next, chop galangal root into small pieces (3 inches in length) and place aside.
- Next, remove and cut the cloves of garlic (about four cloves). Peel and finely mince lemongrass stems (about 1/2 inch thick).
- After that, you will need to crush dried red chili peppers (about four tablespoons) before removing the seeds (optional).
- Next, cut the kaffir-lime leaves into thin strips (5 inches). Next, remove the white part from the stem and leave it alone.
- Then drain the shrimp paste (6 ounces) and then coarsely mash it.
- Finally, measure out sugar and salt.
Step2 - Grind Ingredients
- Blend all ingredients together until smooth.
- It should have a texture similar to peanut butter.
- Note: if you want to reduce the amount of oil in the dish, you can substitute some water for some of the oil.
Step3 - Add Coconut Milk
- Mix the coconut milk into the mixture.
- Add coconut milk slowly so that the paste does not become too sticky.
- If you prefer less spicy, add fewer chillies and more galangal root.
- If you like it spicier, add more chillies and less galangal root. You should enjoy the final product.
Step4 -- Serve
- Serve on top of your favourite foods.
