Saffron is our love affair; a culinary crescendo that evokes a warmth of its own. But cooking is so much more than a single ingredient — it’s also about respect. It’s about respecting people from different cultures who dedicate their lives to creating something extraordinary with every dish they serve; family meals or five-star restaurants alike.

Before I launched my business in 2015, I stared at an old saffron can that was sitting on my desk. It was filled with pens, paper clips, and other office clutter. It was on my desk to remind me of the beauty and usefulness of packaging.

Curio was launched in 2009, and one of my first research projects was to find a manufacturer of metal spice tins that can be reused or recycled. Glass and plastic are also widely used in the spice industry. But there's something classic and old-fashioned about a metal tin.

I found a fabricator in Pennsylvania, near the place where my mother grew up. I called them and spoke with Tony, one of their representatives (who is still working there today!) I was told that the minimum order requirements were very high. After explaining to him my new venture and how I planned to expand it over time, I convinced the man to lower the minimum order and to sell me a smaller amount of empty spice cans and lids. This would allow me to start packing and selling the product. Both of us were taking a chance - he was breaking the rules, and I still had to spend a lot of money on empty spice tins that needed labels.

J.L. Clark is a company based in Lancaster (PA), a city known for the Amish. You may already have other products manufactured by this company, since they are known for printing McCormick’s Old Bay Seasoning Tins. In 2012, the company was awarded a sustainability award which made them the first North American Metal Lithographers to print in a sustainable manner.

By choosing this type of packaging for our signature line from an American company, we not only support a US-based business and prevent excess carbon emissions that would result from sourcing from Asia, where most packaging manufacturers are located, but we also commit to a material, steel, which is infinitely recyclable unlike plastic. Glass is the next most popular material used for packaging at Curio. It is also infinitely recyclable.

Curio is now offering pre-printed cans for the first time ever! This is an important step in both the efficiency of the spice blends we produce (yes, for 7 years we have been hand-labeling the spice tins) and the look of our brand. Since pre-printed cans would have filled our entire warehouse (minimums for pre-printed cans vary), we worked with a small women-owned branding company in Maine to develop our new look. We were able, with the help of the Pulp + wire team in Portland, Maine to elevate and evolve the Curio Brand through the new metal packaging. This material is a rarity in the modern food industry, but speaks to a rich history that honors spices as glamorous, precious ingredients in the pantry.

The newly printed signature tins just arrived, and I'm so proud to be working with this company. I was able to witness the complex process of printing thin sheets of steel, which are then folded into the final product. Each sheet is printed in layers of inks of different colors, in our case over a metallic sheen that appears gold. Brian Craig, who is pictured here, was the press operator for our order. He has worked at the company 34 years. He showed me his calendar on his desk, and told me how excited he was to retire in the next year. The fact that he has been there for about the same amount of time as me humbles and inspires; it is a laborious process to make beautiful things. The press sounds impressive, loud and industrial. There are many wheels and parts working simultaneously in an oily dance to process thin sheets of metal that are painted and baked on a conveyor belt the length of a half-football field. The smell of the plant reminded me of a high-end weaving factory in India that I visited back in 2014. (It's strange how the sheen on that fabric in my mind mimics that of these steel sheets). The machines that produced these metal sheets were so fascinating and mesmerizing, I could have spent the entire day there.

Do You Know How To Make Curry Paste?

Curry paste is made from dried chillies, shallots and galangal root. It also contains lemongrass, galangal root (lemongrass), lemongrass, kaffir Lim leaf, garlic, shrimp paste and sugar. It is an important ingredient in Thai cuisine.

One of the most widely used condiments in Southeast Asia is curry paste. It adds a unique flavour to many dishes, such as curries, soups, stir-fries, salads, rice dishes, noodles, and desserts.

It is very easy to make it at home. Just follow our step-by-step guide below:

Step1 - Prepare Ingredients

  • You need to prepare all ingredients before starting this recipe.
  • Begin by peeling and cutting shallots into small pieces (about 2 cups). Cut galangal root in small pieces, about 3 inches long. Set aside.
  • Next, peel and slice garlic cloves (about four cloves). The lemongrass stems should be roughly 1/2 inch thick.
  • Then, crush dried red chilli peppers (about four tablespoons) and remove the seeds (optional).
  • Next, trim the kaffir lime leaves into strips about 5 inches in length. Next, remove the white part from the stem and leave it alone.
  • Then drain the shrimp paste (6 ounces) and then coarsely mash it.
  • Finally, measure the sugar and salt.

Step2 - Grind Ingredients

  • Blend all ingredients together until smooth.
  • The texture should be very similar to peanut butter.
  • Not to worry if the dish contains too much oil, you can use water to replace it.

Step3 - Add Coconut Milk

  • Add coconut milk to the mixture and mix well.
  • Slowly add coconut milk to ensure that the paste doesn't become too sticky.
  • If you prefer less spice, add less chillies to the recipe and more galangalroot.
  • For a more spicy taste, increase the amount of chillies and reduce the use of galangal root. The final result should taste good to you.

Step4 – Serve

  • Top it with your favorite foods.
  • Enjoy!
