Do you know how to make curry paste?
Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It is widely used in Thai cuisine.
Curry paste is one of the most popular condiments in Southeast Asia. Curry paste adds a distinctive flavour to many dishes such as curries and soups, stir fries, stir-fries or rice dishes.
It is easy to make your own at-home recipes! Follow our step-by–step guide below.
Step1 - Prepare Ingredients
- Before you can start the recipe, it is important to have all the ingredients ready.
- First, peel and chop shallots (2 cups). Then chop galangal root into small pieces (about 3 inches long) and set aside.
- Next, peel and slice garlic cloves (about four cloves). The lemongrass stems should be roughly 1/2 inch thick.
- Then, crush dried red chilli peppers (about four tablespoons) and remove the seeds (optional).
- Next, slice the kaffir lime leaves in thin strips of about 5 inches. Next, remove the white part from the stem and leave it alone.
- After that, wash and drain shrimp paste (about 6 ounces), then coarsely mash it.
- Finally, measure the sugar and salt.
Step2 - Grind Ingredients
- Combine all ingredients and blend until smooth.
- It should have a texture similar to peanut butter.
- You can replace some oil with water if you wish to reduce the oil content of your dish.
Step3 - Add Coconut Milk
- Add coconut milk to the mixture, and mix well.
- Slowly add coconut water to prevent the paste from getting too sticky.
- You can reduce the amount of chillies and increase the quantity of galangal root if you prefer it less spicy.
- If you like it spicier, add more chillies and less galangal root. The final result should taste good to you.
Step4 - Serve
- Top it with your favorite foods.
- Enjoy!
