Spices are an important part of Indian cooking. Each one has different flavors and aromas, which can change the entire taste of a dish.
A typical Indian curry mix includes at least 6 -7 spices. This number varies by region and recipe.
Turmeric
Turmeric is a bright-yellow spice that gives curry its colour and flavour. It’s also an anti-inflammatory and an antioxidant.
It’s found in curry powder, and it can be used in other dishes to add colour, flavour, and anti-inflammatory properties. The turmeric plant, Curcuma longa, grows wild in South Asia and is similar to ginger, in that it’s a rhizome (horizontal stem).
While turmeric can be expensive, it is worth the extra cost for its anti-inflammatory properties and ability to help your liver function better. It also helps to prevent bowel problems and improve digestion.
The best way to store turmeric is to keep it in a cool, dark place, away from direct sunlight. Fresh turmeric can be found at the produce aisle of grocery stores and specialty shops, or you can order it online.
It has a distinctive flavour, with hints of mustard and pepper. The spiciness of turmeric can vary from mild to quite hot, depending on the type of dish it’s used in. You’ll usually need to add a bit of it to a spicy Indian curry to achieve its full flavour and intensity.
Cumin
Cumin is a flavorful and earthy spice used in many Indian dishes. It can be found as whole seeds or ground powder.
To toast whole seeds, spread them on a baking sheet and bake in a preheated oven for about eight minutes. Let them cool before grinding them in a spice grinder or coffee grinder.
A good source of protein and fiber, cumin can help control weight and blood sugar levels. It also helps detoxify the body.
Whether whole or ground, cumin seeds add a rich, warm flavor to savory dishes. It is a wonderful spice for vegetarian soups, stews and meats.
If you are using whole cumin seeds, you should add them to hot oil before adding other ingredients so they can distribute their flavoring. The flavoring will also be more intense when the seeds are lightly toasted.
Garam Masala
Garam masala is a blend of whole spices that are toasted to release their aromas before being ground and then added to dishes. It’s used to add a savory flavor and warmth to many Indian curry dishes.
It’s used in many different types of recipes, from vegetable sides to tomato based sauces and curries. It’s also used in biryani and other rice dishes.
The base of a garam masala recipe varies depending on where the dish is from in India, as well as each family’s personal preferences and cooking techniques. For example, in Northern India, garam masala is often milder, with the heat coming from red chiles, while in the southern states of India, it’s usually more hot.
It’s a versatile spice that works great in any type of curry or stew. However, it’s important to note that as time passes, store-bought garam masala will lose its flavor. To preserve the integrity of your garam masala, store it in an airtight container and place it in a cool, dark place.
Curry Powder
Curry powder is a blend of spices that can be used to add a rich flavor to Indian curries. The flavor of curry powder varies from one dish to the next, but it can be made with some common ingredients like turmeric, cumin, and coriander seeds.
The most important thing to remember when making your own curry powder is that it should be ground fresh. Store your new blend in a cool, dark place with no direct sunlight and in a tight-fitting container with a lid to keep it fresh for up to three to four years.
It's a versatile ingredient that can be used to season roasted vegetables, pureed soups, hummus, egg salad, and popcorn. It can also be added to slow-cooked meat and fish dishes.

What uses is Thai spice?
The term Thai spice is a common phrase that we've heard a lot, but don't really know what it means. But once we start to feel the heat in our mouths, we wonder why it hasn't been eaten more.
It isn't just any spice. It's an essential ingredient that adds flavor and depth to dishes that would otherwise be bland.
Many recipes call for Thai spice, but only a few have the actual thing. Let's discuss how to incorporate these tasty flavors into your meals.
Thais have been cooking with herbs, spices and other flavors since ancient times. Thai comes from the Sanskrit term for "to prepare".
Most Thais like spicy food, even today. This preference can be attributed to Thailand’s hot weather. It is difficult to stay warm when you don't have something to drink. Thais are also more likely to consume chili peppers as compared to Americans or Europeans.
A local Asian grocery store is the best place to learn more about Thai spice. You'll find many ingredients there, including fresh basil leaves, dried chilies and curry paste.
You may also come across whole peppercorns, cloves, cinnamon sticks, star anise, cardamom pods, ginger root, turmeric powder, cumin seeds, coriander seeds, fennel seeds, nutmeg, mace, mustard seed, saffron threads, garlic, onion, rice vinegar and tamarind juice.
Thai cuisine offers two types of spices: dry and moist. The dry spices are usually ground while the wet spices are crushed or pounded finely.
Dry spices can be added to any dish. For example, you can sprinkle ground red pepper onto your chicken soup. A paste is made by combining wet spices and oil with butter or butter.
Wet spices are often used in sauces, marinades, and dressings. The most popular wet spices are fish sauce (oyster sauce), sesame oil, sesame paste, curry paste, and Hoisin sauce.
Thai cuisine can be made at home by learning which spices work well with specific ingredients.
For example, red pepper flakes is recommended for beef. Use white pepper instead if you have seafood such as shrimp.
Online ordering is also possible if you don’t have an Asian market. You will find everything from dried chilies to exotic herbs and spices here.

What's the Difference Between Cooking With Whole vs. Ground Spices?
There is no difference in cooking with whole spices and cooked with ground spices. All spices are ground after harvesting. This ensures that there are no differences in the quality of spices.
But the price gap is significant. Whole spices are more expensive due to the labour required for processing them. But the taste is worth it.
You'll often find extra discounts for bulk purchases when you buy whole spices. For example, you might receive a discount if you buy an entire bag of cinnamon sticks.
The same goes for nutmeg, cloves, ginger, cardamom, etc. If you purchase these spices in bulk, you may be able to save money.
Ground spices are also more durable than whole spices. Ground spices quickly lose their potency due to oxidation.
We recommend buying whole spices because they add flavor to your recipes.
Whole turmeric can be used to make delicious curry. You can also grind whole coriander leaves to make a spice mix for chicken dishes.
Additionally, spices need to be ground. A large amount of whole spices is a good idea. That way, you won't run out of spices too fast.

Are you a master of making curry paste?
Curry paste includes dried chillies (scallions, shallots), galangal root and lemongrass as well as kaffir lime leaves, garlic, shrimp pastes, sugar, salt and sometimes coconut milk. It is used extensively in Thai cuisine.
Curry paste is a popular condiment in Southeast Asia. Curry paste can add a distinct flavour to many dishes like curries.
It's very simple to make this at home. Follow the steps below to make it easy!
Step1 - Prepare Ingredients

- You can then crush the red chilli bell peppers into small pieces (about 4 tablespoons), and then you can remove the seeds (optional).
- Cut the kaffirlime leaves into small strips, approximately 5 inches in length. Next, remove the white part from the stem and leave it alone.
- After that, wash and drain shrimp paste (about 6 ounces), then coarsely mash it.
- Last, take out the salt and sugar.
Step2 - Grind Ingredients
- Blend all ingredients until smooth
- The texture should look similar to peanut-butter.
- You can replace some oil with water if you wish to reduce the oil content of your dish.
Step3 - Add Coconut Milk
- Add coconut milk to the mixture, and mix well.
- You should slowly add the coconut milk so that it doesn't get too sticky.
- If you prefer less spicy, add fewer chillies and more galangal root.
- You can make it more spicy by adding more chilies and less galangal root. The final result should taste good to you.
Step4: Serve
- Top with your favorite food.
- Enjoy!
